I originally posted Cauliflower with Chicken Skillet in the wee early months of blogging when I had no clue what I was doing.. I pointed, I shot and I posted...Life was easy, but the quality of the photos wasn't all that great..
A lot of our family favorite meals didn't receive the credit they deserve and One Skillet Chicken With Cauliflower is one of those dishes. It's easy, flavorful and super budget friendly. When I can get Chicken Thighs and Cauliflower on sale this dinner is made for under $2 a serving and is really easy to make.
I love the clean up since it's all made in one pan. Plus the best part of all is the cauliflower being cooked in the chicken drippings then topped with the chicken and placed in the oven to finish cooking. It imparts a delicious flavor to the cauliflower and needs no additional butter.
This dish can be made with whatever chicken parts you have on hand. Chicken thighs, drumsticks or breast all work well. If you use breast meat the chicken will need to cook longer in the oven.
I am trying to be more budget friendly and this is one of those dinners that is supper yummy.
This meal takes about 15 minutes to prep and 35 minutes to cook.
Cauliflower and Chicken is one of those dishes.
Season both sides of chicken with salt, pepper, dried rosemary, thyme, and lemon peel.
Heat oil and butter in oven safe skillet e.g. cast iron or full stainless steel oven safe pan.
Place chicken skin side down in pan and cook for approximately 7 to 8 minutes per side.
Flip when chicken skin has a nice brown color and brown the bottom.
Either stack chicken in 1 side of pan or remove chicken and add cauliflower and garlic. Toss cauliflower in drippings in bottom of pan and cook cauliflower until it has a bit of color.
Place chicken over the top of cauliflower and put into a 425 degree oven.
Bake for 30-35 minutes or until chicken is cooked through and no longer pink at the bone.
Top with parsley and lemon juice.

- 8 whole Chicken Thighs or Drumsticks
- 1 teaspoon Sea Salt
- 1 teaspoon Pepper
- 1 teaspoon Fresh Or Dried Rosemary
- 1/2 teaspoon Thyme
- 1 whole Lemon, Juiced and Zested
- 1 tablespoon Butter
- 2 tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 1 head Cauliflower, Broken Into Pieces Not Too Small
- 2 tablespoons Flat Leaf Parsley, Chopped
instructions:
How to cook Cauliflower and Chicken
- Preheat oven to 425 degrees.
- Season chicken on both sides with salt, pepper, rosemary, thyme, and lemon zest.
- Heat an oven proof skillet over medium-high heat with butter and olive oil until butter melts.
- Add chicken skin side down and cook until golden brown about 7 to 8 minutes per side. Flip chicken and brown the other side.
- Stack chicken on side of pan or remove to plate.
- Place cauliflower and garlic in pan and coat with pan juices. Cook for approximately 3 minutes or until bottom of cauliflower has a bit of color. Stir.
- Place chicken on top of cauliflower and place in to oven for about 30 - 35 minutes or until chicken is cooked through and no longer pink near the bone.
- Top with parsley and fresh squeezed lemon.

This looks amazing. I've recently been getting into chicken thighs and absolutely love this combo with the cauliflower!
delicious... we all loved it (including a 2 & 4 year old). I deglazed with white wine, and added roasted red peppers before putting in the oven. Thanks for sharing.
