Peanut Butter Chocolate Chip Bites

Peanut Butter Chocolate Chip Bites are gluten free and a healthier sweet street from Serena Bakes Simply From Scratch with options for paleo and vegan.

Let's kick the new year off with Healthy Peanut Butter Chocolate Chip Bites a favorite healthy treat! 

First off let's not judge the ingredients. These are pretty amazing considering what the ingredients consist of. They are Gluten Free, Grain Free, and Dairy Free if you're food sensitive. 

You can use honey if you're following a paleo diet, or agave for a vegan option. 

Even the Hubby and kids love them! They are brutally honest, so I know these are good.

These are a fantastic little dessert or after school treat with no wheat and very high in protein from the chickpeas. Yes, I said it chickpeas.

I told you please don't judge these Peanut Butter Chocolate Chip Bites because they are a very good little treat if your trying to eat healthier in the New Year.

They taste like a doughy peanut butter chocolate chip ball, and are best straight out of the oven! 


Wash chickpeas and add to food processor.

Wash and drain 15 ounces Canned Chickpeas. Add to food processor.

Add to chickpeas peanut butter, sugar, baking powder, vanilla and salt.

Add to the food processor or blender:
  • 3/4 cup Natural Peanut Butter or Favorite Nut Butter
  • 1/2 cup Brown Sugar (or 1/4 cup Honey or Agave)
  • 1 teaspoon Baking Powder
  • 2 teaspoons Pure Vanilla Extract
  • 1 pinch Salt 

I was all out of honey and agave this time so I used brown sugar. I've used all 3 sweeteners and they all work well.

Puree until smooth and creamy.

Pulse to break up chickpeas and then blend until smooth and creamy.

Fold in chocolate chips.

Stir in 3/4 cup Chocolate Chips.

To be honest this dough is pretty incredible at this point as is. I could eat quite a bit without a problem! 

No eggs so go ahead and take a taste or two!

Scoop Peanut Butter Chocolate Chip Bites Cookie dough and bake from Serena Bakes Simply From Scratch.

Scoop out 1" or 1 1/2" balls onto a silpat or parchment lined baking sheet.

The original recipe calls for 1 1/2" balls but I like little round bites to pop in my mouth!

ingredients:

  • 15 ounce Canned Chickpeas, Rinsed And Drained Well
  • 3/4 cup All Natural Peanut Butter or favorite Nut Butter
  • 1/2 cup Brown Sugar (or 1/4 cup Agave or Honey)
  • 1 teaspoon Baking Powder Gluten Free
  • 2 teaspoons Pure Vanilla Extract
  • 1 pinch Salt
  • 3/4 cup Semi-Sweet Or Dark Chocolate Chips Gluten Free

instructions:

How to cook Peanut Butter Chocolate Chip Bites

  1. Preheat oven to 375 degrees.
  2. Combine chickpeas, peanut butter, brown sugar, baking powder and vanilla in a food processor or a blender.
  3. Pulse to combined and then process until smooth like cookie dough, scrape the sides as needed to make a uniform texture.
  4. Add chocolate chips and fold in until combined.
  5. Using a cookie scoop make 1" balls and place on a parchment or silpat lined baking sheet.
  6. Bake for 10-12 minutes until lightly browned.
  7. Cool for about 3-5 minutes.
  8. Enjoy cookies warm.

Your PB Choc. Chip Bites are soooo good! Thank you for this recipce, they definitely come in handy when you're craving, but want to keep it clean {:0) The dough itself is really good, so to cut back on some calories I'll probably only use half the choc. on my next batch. Great recipe, thank you for sharing!
