I thought as school is quickly approaching it's the perfect time to revisit a favorite healthy busy weeknight meal in our house Spicy Jalapeño Mango Shrimp. This was one of the very first recipes I shared on Serena Bakes Simply From Scratch.
The sweetness of the mango paired with the spiciness of the jalapeño and hot sauce with the cilantro makes this a family favorite for a quick healthy weeknight meal or even a light lunch and is easy enough for Colt to make.
Spicy Mango Shrimp is a favorite easy dinner recipe in our house. I adore the spicy sweet combination of the jalapeños, mango, and shrimp. Something about shrimp with mango is just absolutely delicious.
It's delicious served plain but we will usually serve it over a 50/50 mix of brown and white rice.
You could also stir in some red bell peppers for extra color and veggies.

This is one of our favorite family quick meals to make, all the kids love it. It's so light, perfect for a night when the kids have sports. Such a delicious meal and is done in the time it takes to make the rice to serve it on.
Squeeze 1/2 a lime over the top of 2 diced Mangos.
Sauté 1/2 whole Diced Onion in 2 tablespoons Olive Oil until onion starts to caramelize over med-hi heat.
Add:
- 2-3 whole Jalapeños, Seeded and Diced
- 4 whole Cloves Garlic, Minced
Add 1 pound Large Shrimp, Peeled
Turn when bottom of shrimp is mostly pink.
Add:
- 1/4 cup Dry White Wine
- 2 tablespoons Soy Sauce
If you are Gluten Free you can use Tamari instead of Soy Sauce.
Add Hot Sauce of choice to taste. I like either Cholula or Sirarcha to taste.
How spicy this dish is really comes down to the how hot the jalapeño is and how much hot sauce you use.
Cook until shrimp are pink on both sides.
Add:
- Diced Mango
- 1 handful Cilantro, Stemmed and Chopped
- Juice of half a Lime
Serve plain or over rice.
