The BEST Blackberry Cobbler recipe ever is so easy to make from scratch for a favorite summertime dessert. 6 Pantry staple ingredients and blackberries is all you'll need to make this delicious easy cobbler recipe. Blackberry Cobbler is one of my favorite ways to use frozen berries during the winter. 

Cobbler makes a delicious alternative or addition to Pie for the Holidays for Thanksgiving and Christmas. Other Cobbler Recipes you might love are Blueberry Cobbler, Caramel Apple Cobbler, and Easy Peach Cobbler.

Blackberry Cobbler is always a favorite use of all the wild blackberries that are in season right now.

The kids have been out picking blackberries and Lorna made this delicious Blackberry Cobbler recipe last week to help Colt with dinner.  Colt captured some wonderful pictures not knowing I had already published this recipe in the very early months of the blog.

What a blessing it was.

I think the pictures turned out gorgeous, and a perfect time for a recipe update.

Blackberry Cobbler is super easy to make, always turns out delicious and comes from my dear friend Rachelle.  It's the absolute BEST Blackberry Cobbler recipe. The boys couldn't believe Lorna had made this all on her own and she had such a feeling of accomplishment.

I've known Rachelle since my freshman year of  High School. She was our neighbor, and would have me over for dinner many nights, since my Father usually worked grave yard shift.

I also babysat her two oldest daughters when they were wee little ones.  Now her oldest Ashley has the most adorable little boy herself. 

Rachelle is an incredible woman, amazing cook, photographer and is a truly genuinely kind person. She has touched my life in many ways over the years, and I am so thankful every day for our friendship.

Just don't forget a scoop of vanilla ice cream.. Here's how to make Homemade Blackberry Cobbler:

Blackberries, Sugar, and Flour in a mixing bowl for Blackberry Cobbler.
Mix together: 
  • 5-6 cups Blackberries
  • 1/2 cup Sugar
  • 2 tablespoons All-Purpose Flour
Spread evenly in an  8"x11" baking dish.

If berries are frozen let them defrost a little with the flour mixture until most of the flour sugar is absorbed.

Carefully stir until combined.

Lorna has by passed me in height and is close to 5'8". Colts is 6'6" so I am sure soon I will be the short Mom in the land of the giants when family pictures are taken.

I might just have to invest in some high heels..lol

Flour, Sugar and Baking Powder mixed together in a mixing bowl with an egg in the center and a teaspoon of Vanilla being held over the top of bowl.

Combine in a mixing bowl:
  • 1 cup All-Purpose Flour or Whole Wheat Pastry Flour( We use 1/2 whole wheat pastry flour/ 1/2 organic white)
  • 1 cup Granulated  Sugar
  • 1 teaspoon Baking Powder
Mix and make a well in the center. 

Break 1 whole Egg in the center and add 1 teaspoon Vanilla Extract.

Use a fork to blend egg and vanilla in the center and start to mix in flour from the edge of bowl. Continue to mix flour into egg mixture until fully incorporated and mixture becomes fine crumbles.

Cover berries evenly with cobbler topping mixture.

Now here comes the really naughty part, drizzle the top with 1 stick melted butter, evenly.

Since butter makes everything better!

Bake in a Preheated 375 degree oven for 45-55 minutes until top is brown and berries are bubbly.

Ingredients

Blackberry Cobbler Filling
  • 6 cups Blackberries
  • 1/3- 1/2 cup Granulated Sugar
  • 2 tablespoons All-Purpose Flour
Blackberry Cobbler Crust
  • 1 cup All-Purpose Flour or Whole Wheat Pastry Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1 whole Egg, Beaten
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Butter, Melted

Instructions

How To Make Blackberry Cobbler
  1. Preheat oven to 375 degrees.
Blackberry Filling
  1. Mix all blackberries, sugar to taste, and flour.
  2. Place in a 8 x 11 pan. Spread blackberry filling evenly in pan.
Blackberry Cobbler Crust
  1. Mix flour, sugar, and baking powder in a large bowl, until combined.
  2. Make a well in the center of the flour mixture.
  3. Break egg into the center of flour, add egg, and vanilla.
  4. Use a fork or mixer to combine eggs, and vanilla. Mix eggs with flour mixture until well combined, and crumbly, like cake mix.
  5. Place crumb mixture evenly over the top of blackberries.
  6. Drizzle melted butter evenly over blackberries.
  7. Bake 45-55 minutes until top in brown and berries are bubbly.

I made this ahead of time for Thanksgiving. Do you think it should be refrigerated overnight?

I would probably refrigerate it. Once it's covered on the counter the crust becomes soft. If you refrigerate it and reheat it, it keeps a crunchier crust. Happy Thanksgiving! -Serena

Always in search of a good crunch on top cobbler recipe not fond of those with the corn starch method and this recipe is just what ive been looking for just as a cobbler should be thanks for sharing

This is a perfect cobbler, you can use any fresh fruit and I think it will work great. Going to try this weekend. I’m sure it will be a staple in my kitchen.
