Recipe for Homemade Chicken Noodle Soup with an easy shortcut version.
There is nothing in life like a bowl of Homemade Chicken Noodle Soup!
Especially when you are fighting a cold like we are. Hence my lack of posting in the last few day. This is a house favorite.
If you use a full recipe of noodles and a baked whole chicken you will have plenty of left overs to have for lunch or to freeze.
I'm also including a few shortcut options for an easy Chicken Noodle Soup, incase you aren't up to making Homemade Chicken Stock and Noodles.
Here's how I make Homemade Chicken Noodle Soup:
I used 1 recipe for Chicken Stock or a good quality box Organic Chicken Bone Broth will work if you aren't up to making homemade chicken stock or have the time. Boxed bone broth is the closest I've found to homemade stock.
I had a leftover Roasted Chicken that I skinned, deboned, and diced the meat up this time. But when I'm in a hurry or don't have leftover chicken I've added 3 whole Diced Raw Chicken Breast directly to the soup.
I added whole jalapeño to the Chicken Soup Stock to help clear out our sinuses, but you can omit if you don't like spicy food.
I also added:
- 1 pound Sliced Carrots
- 6 stalks Celery Diced
- 1 tablespoon Grated Fresh Ginger
- 1 teaspoon Thyme
- 1 teaspoon Chopped Rosemary
- 2 whole Bay Leaves
Simmer for 20-30 min until carrots are tender.
Add 1 recipe Homemade Egg Noodles.
Of course you could use store bought but I have started to spoil my kids and this of course lights up their faces with homemade noodles and hubby too! If I'm not up to making noodles, Fresh Refrigerated Fettuccini Noodles are a great alternative to save time.
I added just a pinch of aluminum free baking powder to the flour with salt when I make the noodles for soup.
It makes the Noodles a little lighter.
Add 1 pound Cut Noodles to soup and cook for 10-15 minutes until tender.
Remove from heat and stir in parsley. Taste soup and add salt and pepper to taste.

- 10 cups HomemadeChicken Stock or Good Quality Organic Chicken Stock

- 1 teaspoon Thyme
- 1 teaspoon Rosemary, Chopped
- 2 whole Bay Leaves
- 1 handful Parsley, Chopped
- Salt and Pepper, To Taste
instructions:
How to cook Homemade Chicken Noodle Soup
- Bring chicken stock to boil.
- Add carrots, celery, chicken, jalapeño if using, fresh ginger, thyme, rosemary and bay leaves.
- Cook until carrots are tender and if using raw chicken breast it is cooked through, about 20-30 minutes.
- Once carrots are tender add noodles and cook an additional 10-15 min. until tender.
- Remove from heat and stir in chopped parsley.
- Add salt and pepper to taste.
NOTES:
I've included options for an easier version of Homemade Chicken Noodle Soup using a good quality boxed chicken stock, and fresh refridgerated fettuccine noodles that we make when we need a faster, easier version.
Also raw chicken breast can be cubed and added to Chicken Stock to save time if cooked isn't available. Just boil chicken breast for 30 minutes in stock until thoroughly cooked.

There is nothing better than homemade chicken soup :)
This is terrific! Incredible that you add a jalapeno and ginger - I bet it gives it an amazing taste! Homemade noodles are so delicious, too. This is awesome!
It's definitely that season - my husband's sick too and practically begged me to make something soup. Love that you make your own noodles and stock, it probably ends up so tasty.
