- 1 whole Medium Sized Onion, Diced
- 2 whole Carrots, Diced
- 2 whole Ribs Celery, Diced
- 1 whole Bell Pepper, Diced
- 2 whole Jalapeños, Seeded and Diced or 1 Poblano Chili for less spicy
- 4 cloves Garlic, Minced
- 1 tablespoon Granulated Garlic,
- 3 tablespoons Chili Powder
- 1 tablespoon Oregano
- 1 tablespoon Ground Cumin
- 5 cups Chicken Stock
- 28 ounces Diced Tomatoes with Juice
- 3 cups Fresh or Frozen Corn
- 3 cups Diced Cooked Chicken or Diced Chicken Breast
- 15 ounces Black Beans, Drained and Rinsed
- 15 ounces Kidney Beans, Drained and Rinsed
- Grated Cheddar Cheese
- Tortilla Chips
- Sour Cream
- Diced Avocado
- Chopped Cilantro
- Pickled Jalapeños

Ingredients
- 1 tablespoon Extra Virgin Olive Oil
- 1 whole Medium Onion, Diced
- 2 whole Carrots, Diced
- 2 ribs Celery, Diced
- 1 whole Bell Pepper, Seeded and Diced
- 4 cloves Garlic, Minced
- 1 tablespoon Granulated Garlic
- 3 tablespoons Chili Powder
- 1 tablespoon Oregano
- 1 tablespoon Cumin
- 2 whole Jalapenos or 1 whole Poblano, Seeds Removed and Diced
- 1 handful Cilantro, Chopped and Stem Removed
- 5 cups Chicken Stock
- 28 ounces Diced Tomatoes with Juice
- 3 cups Corn, Fresh or Frozen
- 15 ounces Canned Black Beans, Drained and Rinsed
- 15 ounces Kidney Beans Drained and Rinsed
- 3 cup Diced Chicken, Cooked Or Raw
- Grated Cheddar Cheese
- Tortilla Chips
- Sour Cream
- Diced Avocado
- Chopped Cilantro
- Pickled Jalapeños
Instructions
- In a large stock pot add olive oil, onion, carrots and celery. Heat over medium high. Cook until softened and starting to caramelize.
- Add bell pepper, jalapeños, and seasonings. Cook for about 2 minutes until fragrant.
- Add chicken stock, cilantro, diced tomatoes with juice, corn, chicken, black bean and kidney beans. Stir well.
- Bring to a simmer and turn to low cook for at least 30 minutes or until chicken is done. Soup can also simmer on low for 1-2 hours if time allows.
Notes:
All the ingredients can be added to the Crock Pot and cooked on low for 6-8 hours for Crock Pot Chicken Taco Soup. If time allows I do like to still sauté the onion and veggies for flavor.
