Rocky Road Ice Cream

Rocky Road Ice Cream is a summertime favorite! Creamy chocolate ice cream is filled with chewy marshmallows and sliced almonds. 

Once you make Homemade Rocky Road Ice Cream you'll be making it all year! Not only is it easy to make but this is simply the best recipe!

I scream you scream we all scream for Homemade Rocky Road Ice Cream!

Who doesn't just love rocky road ice cream? It's a smash hit in our house.

Our kids have a fun time helping create the ice cream, the boys had fun helping stir and add ingredients as needed.

I also love that there is no question about what ingredients are in the ice cream, since it's from scratch.

If were going to get real here there are very few ice creams quite as good..

Here's how to make Homemade Rocky Road Ice Cream:

Cocoa Powder and Granulated Sugar being whisked together in a stainless steel saucepan.

Whisk together in a large saucepan until well combined:
  • 1/2 cup Cocoa Powder
  • 3/4 cup Granulated Sugar

Milk and cream whisked into cocoa powder sugar mixture in a stainless steel pan.

A 1/4 cup at a time to prevent lumps whisk in:
  • 2 cups Whole Milk
  • 2 cups Heavy Cream 
Heat over medium heat until simmering.

Egg Yolks whisked together in a measuring cup.

Whisk together 4 whole Egg Yolks in a heat safe container.

Once cream mixture comes to a simmer remove from heat and stir in:
  • 1/2 cup Good Quality Semi Sweet Chocolate Chips
Stir until chocolate is melted.

Egg yolks whisked with Chocolate Ice Cream Base in a measuring cup.

Stir in Chocolate Ice Cream base mixture in with egg yolks 1/4 cup at a time to temper yolks and prevent curdling until 2 cups chocolate-cream mixture has been added.

Pour egg yolk mixture into the remaining chocolate cream mixture in the pan.

Continue to stir over medium heat and return to a simmer.

Cook about 2 minutes until slightly thickened and remove from heat.

Salt in a hand over chocolate ice cream base in a stainless steel sauce pan.

Stir until well combined:
  • 1 pinch Salt
  • 1 teaspoon Pure Vanilla Extract

Place into a heat safe bowl. Cover and refrigerate until cold.

In an ice cream maker add Chocolate Ice Cream base mixture and process according to manufacturers instructions. 

I processed mine for 15 minutes until looking almost like soft serve ice cream. 

After 15 minutes I added the 1 cup Sliced Almonds.

Mix in:
  • 1 cup Mini Marshmallows
Process another 5 minutes.

Rocky Road Ice Cream in an Ice Cream maker.

After 20 minutes ice cream should look like soft serve.

Remove ice cream mixture to a freezer safe container.

I used a plastic storage container this time but next time I am going to try a left over yogurt container.

I think it might hold up better when scooping. Freeze for at least 6 hours or until firm.

Rocky Road Ice Cream

Homemade Rocky Road Ice Cream recipe from scratch. Creamy Chocolate ice cream filled with sliced almonds and marshmallows.

Ingredients

  • 1/2 cup Natural Unsweetened Cocoa Powder
  • 3/4 cup Granulated Sugar
  • 2 cups Whole Milk
  • 2 cups Heavy Cream
  • 1/2 cup Semi Sweet Chocolate Chips
  • 4 whole Egg Yolks
  • 1 pinch Salt
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Sliced Almonds
  • 1 cup Mini Marshmallows

Instructions

  1. In a large sauce pan add cocoa powder and sugar. Mix until well combined.
  2. Add milk 1/4 cup at a time mixing thoroughly between additions. Continue to repeat with cream. Bring to a simmer over medium heat, stirring frequently. Once simmering remove from heat and add chocolate. Stir until dissolved.
  3. In a small heat proof container add egg yolks and whisk. Take 1/4 cup chocolate-cream mixture and add to egg yolks while stirring to temper. Repeat until 2 cups chocolate-cream mixture has been added to the egg yolks. While stirring the chocolate-cream mixture in the pan return to medium heat and add chocolate-egg yolk mixture.
  4. Return to a simmer and cook 2 minutes or until slightly thickened. Remove from heat. Add salt and vanilla, stir well.
  5. Place chocolate ice cream base mixture into a heat safe container and refrigerate until cold.
  6. Follow manufacturers suggestions for your ice cream maker.
  7. Add chocolate ice cream base mixture to the ice cream maker and process for 15 minutes or until starting to look like soft serve ice cream. Add almonds and marshmallows and process another 5 minutes.
  8. Place ice cream mixture into a freezer safe container and freeze for 6 hours or until firm.

Are the almond slices supposed to be toasted?
Seems like they should be to bring out the flavor of the almonds.

Just made this. Used chopped toasted pecans. Chocolate flavor is a more of a dark flavor. I prefer milk chocolate. Next time I’ll use milk chocolate chips and a little more sugar. Maybe add some brown sugar. However this recipe is VERY good. In search of the perfect rocky road.
