Quick Shrimp Tacos Recipe

Shrimp Tacos are a quick and easy dinner recipe. Flavorful juicy shrimp, caramelized onions, red pepper, garlic, and Mexican seasonings are piled into corn tortillas. 

You can then dress your Shrimp Tacos with whatever you like. Some favorite toppings are Pico De Gallo, Mango Salsa, Habanero Pineapple Blueberry Salsa, Tomatillo Salsa, tomatoes, avocado, grated cheese, shredded lettuce, and sour cream.

My sweet husband made these last week for me and even took the photos. Why you might ask? Well, you see my darling daughter was helping rinse off the dishes after dinner and accidentally dropped a plate on my white corning ware baking dish. Oops, it's ok sweetie let Mom clean this up! You just go get ready for bed. I don't want you to cut yourself... Can you guess what happened next? 

No, I didn't go take a nice hot bath..Guess again.. No, I didn't curl up in bed with my cozy pajamas and read a good book.. Bingo, I sliced my right middle finger open up the side from below to above my knuckle. (Yes, I'm right handed.) This was followed by Lorna freaking out, "Mom should I call 911?" Me," no I will be ok please whatever you do don't call 911 for this!" 

Then I went on to spend the next 10 minutes trying to decided if I could just wrap it up real good and be on my marry way. Nope it definitely needed stitches!  Off to get stitches at the walk in clinic I went.  I won't go into detail because this is a cooking blog about how it looked but I went in to the walk in clinic 6 minutes before they closed and had my finger scrubbed out (the most painful thing ever) and 5 stitches put in. Now, I look like I'm giving the middle to everyone from all of the bandaging, please don't judge me if you see me. So needless to say the doctor wrote a note to my husband saying no dishes for 10-14 days. I'm really not to be cleaning either and it's really difficult to cook when you can't chop. So the kids and hubby have been helping out a lot!

Ok, now on to how to make Shrimp Tacos: 
Onions, Garlic, and Red Bell Pepper in a cast iron pan.

Heat 2 tablespoon Olive Oil in a heavy duty pan over medium-high heat.

Add 1/2 whole Diced Sweet Onion and cook until onion starts to caramelize. 

Mix in:
  • 1 whole Red Pepper, Seeded and Diced
  • 4 cloves Garlic, Minced

Chili Powder, Cumin, and Salt added to sautéed onions, red bell pepper and garlic in a cast iron pan.

Stir in: 
  • 2 teaspoons Chili Powder
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Salt
Sauté until fragrant about 1 minute. Add 1 ounce of tequila or water to deglaze pan.

Add 2 pounds Shrimp that are peeled, deveined and tails removed. Cook until shrimp turn pink.

Serve shrimp in warmed corn tortillas or fry the tortillas in a little olive oil if you like them crunchy.  Serve with whatever your favorite taco toppings are like shredded lettuce, diced tomato, grated cheese, Pico De Gallo, Habanero Pineapple Blueberry Salsa, Mango Salsa, and Tomatillo Salsa Verde.

Quick Shrimp Tacos

Quick Shrimp Tacos

Shrimp Tacos are a quick and easy dinner recipe. Flavorful juicy shrimp, caramelized onions, red pepper, garlic, and Mexican seasonings are piled into corn tortillas.

Ingredients

  • 2 tablespoons Olive Oil
  • 1/2 whole Large Sweet Onion, Diced
  • 4 cloves Garlic, Minced
  • 1 whole Red Bell Pepper, Seeded And Diced
  • 2 teaspoons Chili Powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1 ounce Tequila Or Water (To Deglaze Pan)
  • 2 pounds Shrimp, Peeled, Deveined And Tails Removed
  • Corn Tortillas

Instructions

  1. In a large sauté pan over medium-high heat add oil and onion. Saute until onion starts to caramelize.
  2. Add garlic and red bell pepper. Stir well.
  3. Add all seasonings and stir. Cook until seasoning becomes fragrant about 1 minute. Add tequila or water to deglaze the pan.
  4. Add shrimp and cook until shrimp turn pink. Shrimp are done when pink.
  5. Serve with desired toppings.

Notes

For Serving: Corn Tortilla's (Warmed), Pico De Gallo, Favorite Salsa, Avocado, Guacamole, Limes, Hot Sauce, Sour Cream and anything else your heart desires.

Sorry about the bad cut, my husband cut his finger pretty bad and had to have stiches as well. It is great to have sharp knives, but they can really do a number on those fingers!
Anyhow, it is sweet of the hubs to do all the cooking in this instance! This dish does indicate he knows his way around a kitchen. Those tacos do look pretty tasty!

Oh my, the fillings look so delicious! How could I resist? However, hope you're alright. I had my bad cut a year ago.... know what! I almost chopped off my pointing finger. Luckily, everything is back in shape now. Take care & have a great day.

Yuck! I had cut open my knuckle years ago while having my hand in a glass to clean it out. It was under the warm water, so I had no idea that the glass broken nor that I had cut my hand. I just kept swishing my hand back and forth over the broken glass and cutting into it deeper until I saw the water change colors.
Anyway.. I love the shrimp tacos. I haven't had something like this in a long time. Think it's time to enjoy this recipe.

I'm surprised you're even able to type! What a horrific accident. And so many stitches from a cut from a broken plate? You'd hardly think it possible. I do hope you recover quickly with no complications - and that scrubbing sure does sound painful! xx

Oh I'm so glad you're ok! I literally shuddered at the thought of your finger getting scrubbed out (gah!). The same thing just happened to my husband (although no where near as bad as you're describing) but he's a big baby and insisted on going to the emergency room :P

But hey - at least your awesome family is making you these delicious looking shrimp tacos! That shrimp looks great with the seasoning and veggies.

Absolutely delish! I won't tell you that I will try this some day, I found it and made it. Including the Pico De Gallo. Did the hot sauce (Sriracha), Sour Cream, and Guacamole too. Yum, Yum and dare I say.....YUM! Easy, Fast, and tasty. I will absolutely be keeping this recipie on hand. And definitely deglaze the pan using Tequila! Michelada's go really well with these too. (Google it) Yahoo!!
