Chicken Sweet Potato Chili recipe with Chipotle Peppers, Pumpkin Ale, and Black Beans from Serena Bakes Simply From Scratch.

This months Yahoo Shine Supper Club Challenge is One Pot Meals and I thought what better way to celebrate then with my favorite Chicken Sweet Potato Chili.

It's football season in case you don't have football fever going around your house like it's going around mine. It really is just the boys in the house it seems to spread to but I always enjoy the food. The Hubby let me know you all love recipes for a good tailgating party. He must be a mind reader I guess. He is pretty incredible! So I decided to take his recommendation.

Just in case you don't have football fever don't fret. If I were you I would just make any excuse to make this. Sooner rather then later because it is D-E-L-I-C-I-O-U-S! I mean what a perfect fall comfort food dish! Does life get any better then chipotle peppers, chicken, black beans, sweet potatoes, topped off with a pumpkin ale? I think not!

The hubby had eaten half a bowl of Sweet Potato Chili before we even sat down to eat and the kids cleaned their plates.   



We used a bottle of 12 ounces of Blue Moon Harvest Pumpkin Ale Beer. You can use whatever your favorite beer is or 12 additional ounces of Chicken Stock if you don't like beer.

Sauté onions add chipotle pepper and garlic for Chicken Sweet Potato Chili.

Sauté 1 whole Large Diced Onion in 2 tablespoons Extra Virgin Olive Oil until starting to caramelize. 

Add:
  • 4 cloves Minced Garlic
  • 2 whole Diced Chipotle Peppers

Sauté until fragrant for about 2 minutes.


Add:
  • 2 whole Diced Chicken Breast
  • 2 tablespoons Chili Powder
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Cumin 
  • 1 tablespoon Chipotle Sauce from Peppers
  • 1 teaspoon Oregano 
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Salt
 Sauté for 4 minutes.

Pouring Pumpkin Ale Beer into Chicken Sweet Potato Chili.

Add 12 ounces Pumpkin Ale Beer or Favorite Beer or additional Chicken Broth. 

Pour Chicken Stock into Chicken Chili mixture.

Add 3 cups Chicken Stock into Chicken Chili mixture and stir to combine.

Black Beans, Sweet Potato, Bell Pepper added to Sweet Potato Chili Recipe in Soup pot.

Add:
  • 1 pound Soaked and Cooked until tender Black Beans
  • 2 whole Peeled and Diced Sweet Potatoes
  • 1 whole Diced Bell Pepper
Stir to combined. Bring Chicken Sweet Potato Chili to a simmer, cover, turn heat to low and cook for 2 hours.

Add Cilantro to Sweet Potato Chili.

Right before serving add cilantro to Chili.

ingredients:

  • 1 pound Dried Black Beans, Soaked And Cooked Until Tender
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 whole Large Onion, Diced
  • 2 whole Chipotle Peppers In Adobo Sauce, Diced
  • 4 cloves Garlic, Minced
  • 2 whole Chicken Breast, Diced
  • 2 tablespoons Chili Powder
  • 1 tablespoon Smoked Paprika, Optional
  • 1 tablespoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Salt
  • 1 tablespoon Adobo Sauce, From Chipotle Peppers
  • 12 ounces Pumpkin Ale or Favorite Beer or Additional Chicken Stock
  • 3 cups Chicken Stock
  • 2 whole Sweet Potatoes, Peeled And Cubed In Bite Size Pieces
  • 1 whole Yellow Bell Pepper, Diced
  • 1/2 bunch Cilantro, Chopped
  • 1 1/2 cups Greek Yogurt Or Sour Cream, For Garnish
  • 2 cups Monterey Jack Cheese, Shredded

instructions:

How to cook Chicken Sweet Potato Chili

  1. In a large stock pot sauté onion in olive oil over medium-high heat until starting to caramelize.
  2. Add garlic and chipotle peppers and sauté until fragrant.
  3. Add chicken and all of the seasonings including adobo sauce and salt. Saute for 4 minutes.
  4. Pour in beer and chicken stock. Scrape any brown bits off the bottom of the pan.
  5. Add sweet potatoes, black beans, and bell pepper.
  6. Bring to a simmer, cover and turn heat to low.
  7. Cook for at least 2 hours or place into a crock pot for 8 hrs.
  8. Add cilantro and serve.
  9. Garnish with greek yogurt and cheese.

Love the chipotle, love the chili, love the beer. Sounds perfect for the fall! I bought a season pack of blue moon with this pumpkin ale and a caramel apple ale, both so good. Never thought about cooking with them, that would just slow down my drinking ;)

Hello,

I love spicy food but my family...not so much. This recipe sounds so good so I must try it but I heard chipotle in adobo sauce is rather hot.

Any recommendations for how to make it less spicy but still with a small kick?

Half the amount of chipotle/adobo or quarter it??

You can easily just start with a quarter of the chipotle and then taste after an hour and see if you would like it a little hotter add a little more.

Hi - just found your recipe through tasty kitchen. This looks amazing! Do you think the two hours of cooking on low heat could be done in a crock pot on low? I wanted to put this on and then run some errands later today.

Hi Natalie I would let the chili sit in a crock pot for more like 6 hours because the heat is so low and it takes it a while even to come to a simmer! This would works fabulous in a crock pot! Have a fantastic day!

What could I use in place of the beer? I live in a dry country, so beer is unavailable.

I've made this several times in a crock pot (about 6 hours on low) - I cooked the onions first, used a roasted chicken from the grocery store shredded, and canned beans. It's fabulous!
