Asian Shrimp Soba Noodles With Vegetables

I usually keep the fridge stocked with my favorite Asian flavors at any given time to make this Asian Shrimp Soba Noodles with Vegetables. Rice vinegar, sesame seed oil, gluten free soy sauce, sriracha sauce or chili paste, limes and ginger are staples for my cupboards. I am sure nothing I make is ever an authentic Asian dish but more of a fusion of flavors I .

If you are afraid of the heat or just don't like the spiciness feel free to omit the jalapenos and sriracha sauce. Asian Shrimp Soba Noodles with Vegetables isn't super spicy but the jalapenos and sriracha sauce add a nice subtle flavor with just a touch of heat. Also the veggies can easily be subbed out for what you have available in your fridge at home just try to keep in mind the flavors of the vegetables so they compliment an Asian dressing.

For the dressing: Chop jalapeno fine.

Grate 1 teaspoon of fresh peeled ginger.

Combined jalapeno, fresh grated ginger, extra virgin olive oil, rice vinegar, sesame seed oil, honey, soy sauce and juice of half a lime. Set aside until ready to use.

I love sugar pea's, the kids get so excited when they find them in the fridge to snack on raw. Remove ends off of sugar peas or snow peas. You will need about 2 cups.

Shred 2 cup cabbage.

Mmmm...Don't forget the 2 cups each of cucumber, broccoli, bell peppers and mung bean sprouts. I'm missing the picture's for the last few.. Don't ask what happened, I'm still trying to figure that out.

Remove stems and chop about 1/4 cup thai basil.

Chop 1/2 bunch cilantro.

Cook soba noodles according to package directions and rinse under cold water. Drain well.

Place shrimp in a pot of boiling water just until pink. Remove immediately.

Rinse under cold water just to cool and drain well.

Toss all ingredients together with dressing.

Eat immediately or place in the refrigerator for an ice cold salad. Salad improves after sitting.

Asian Dressing
  • 1 whole Jalapeno, finely Diced And Seeded
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 cup Plain Rice Vinegar
  • 2 tablespoons Toasted Sesame Seed Oil
  • 2 teaspoons Honey
  • 2 tablespoons Soy Sauce
  • 1/2 whole Lime, Juiced
  • 1/2 teaspoon Sriracha Sauce, Or To Taste
  • 1 teaspoon Fresh Ginger, Grated
Asian Shrimp Soba Noodles With Vegetables
  • 1 pound Shrimp, Peeled And Deveined
  • 9.5 ounce Soba Noodles
  • 2 cups Mung Bean Sprouts
  • 2 cups Broccoli
  • 2 cups Sugar Snap Peas Or Snow Peas
  • 2 whole Bell Peppers, Sliced (I like red, orange or yellow)
  • 2 cups Red Cabbage, Shredded
  • 1/2 bunch Cilantro, Chopped
  • 1/4 cup Thai Basil, Chopped

instructions

Asian Dressing
  1. Combine all jalapeño, olive oil, rice vinegar, sesame seed oil, honey, soy sauce, lime juice, sriracha sauce, ginger and stir well. Set aside.
To Cook Shrimp
  1. Bring a pot of boiling water to add shrimp and cook shrimp until pink. About 2 minutes.
Soba Noodles
  1. Bring a large pot of water to boil and cook according to package directions. Drain and rinse under cold water. Drain well.
Assemble Asian Shrimp Soba Noodles With Vegetables
  1. Place all ingredients in a large bowl, top with dressing and toss to combine.

This is art!! I bet it tastes awesome!! Where do you get sriracha sauce or the soba noodles. I don't usually venture that direction in the store. Would it be at any store or a specialty store?? Thanks for your facebook help!!
