Tortillas stuffed with sausage or bacon, eggs, potato, bell peppers, spinach, and cheese are a favorite Breakfast Burrito recipe for breakfast, brunch, or just an easy grab and go breakfast.
Breakfast Burritos are always a staple in our house. With Easter fast approaching can you think of a better way to start your morning?
What could be better than eggs, sausage or bacon and potatoes with some hidden spinach or kale and mushrooms, avocado, greek yogurt and salsa wrapped in a tortilla shell?
If you ask me nothing! We love the flavor combination of the Mango Salsa, it adds a wonderful slightly sweet flavor that goes fabulously with sausage or bacon!
Breakfast Burritos are definitely a go to meal when we go camping or when we need something we can take with us in the car. Kid tested and Mother approved!
Here's how to make your favorite Breakfast Burrito recipe:
In a large skillet over medium high heat melt 2 tablespoons butter.
Add:
- 2 whole Diced Potatoes
- 1/2 whole Diced Onions
Add 6 ounces Sliced Mushrooms and sauté until mushrooms start to soften. Feel free to leave out if you don't like mushrooms.
At this point push all the veggies over to one side of the pan and add 1/3 lb Breakfast Sausage or Bacon if using.
Cook meat until cooked through. Mix sausage with veggies.
Season with:
- 1 pinch Salt
- Ground Pepper to taste
- 1 teaspoon Granulated Garlic
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
Stir in 3 cups Chopped Spinach or Chopped Kale and cook for 1 minute or until just barely wilted.
Cook a little longer if using kale until wilted.
Combine 5 whole Eggs with 1/4 cup Milk. Whisk until thoroughly combined.
If your skillet is large enough push the sausage veggie mixture over to the edge, other wise remove from pan.
Add 1 tablespoon butter, wait until butter melts and add eggs. Let eggs set for about 45 seconds and then scrape the bottom of the pan to scramble the eggs.
Continue to scramble the eggs until cooked through.
Combine the eggs with the veggie mixture and your ready to fill your Flour Tortilla's. If your really looking for a treat you can make Homemade Soft Flour Tortillas.
Choose your topping of choice. We like avocado, cheese and greek yogurt along with a favorite salsa.

Breakfast burritos, something I've never thought of before!

Can these be frozen? I thought I would make a batch and try them. If they are a hit, I want to make up a bunch to keep frozen for fast meals when needed.
