I've seen these Flourless Peanut Butter Cookies floating all over the blogosphere.

I've actually seen them so much I'm not really sure where to give credit for where the recipe came from.

But I can tell you Flourless Peanut Butter Cookies are all the rage for a reason, they are easy to make, crunchy around the edges, moist, chewy and definitely peanut buttery!

Here's how to make these delicious Flourless Peanut Butter Cookies:

The deciding factor on what treat I was going to make for the kids was this and I was all out of flour too! What was a girl to do? 

Flourless Peanut Butter Cookies it was because I always maintain an arsenal of peanut butter for the kids lunches and was down to 1 egg.

Combine in mixing bowl:
  • 1 cup Peanut Butter it can be Chunky or Creamy Peanut Butter
  • 3/4 cup Brown Sugar Plus 2 tablespoons Brown Sugar
Mix until smooth and creamy. This can be done in a mixer or by hand.


A teaspoon of Vanilla held over Peanut Butter Cookie Dough.
Add:
  • 1 whole Egg
  • 3/4 teaspoon Baking Soda
  • 1 pinch Salt
  • 1 1/2 teaspoons Vanilla Extract
Mix another minute until fully combined.

The Peanut Butter Cookie dough might look a little crumble but will hold up when scooped with a cookie scoop or tablespoon.

Scoop dough using a standard size cookie scoop or a heaping tablespoon and roll into a ball. 

Place onto a Silpat or parchment lined baking sheet about 1 1/2" apart.

Bake cookies in a 350 degree oven for 10-12 minutes until lightly brown around the edges.

Allow cookies to cool for 2 minutes on cookie sheet before moving to a cooling rack.

Flourless Peanut Butter Cookies

Flourless Peanut Butter Cookie recipe are a delicious easy to make Peanut Butter Cookie from Serena Bakes Simply From Scratch.

Ingredients

  • 1 cup Peanut Butter 3/4 cup Brown Sugar, Packed 2 tablespoons Brown Sugar
  • 1 whole Egg
  • 1 1/2 teaspoon Pure Vanilla Extract
  • 3/4 teaspoon Baking Soda
  • 1 pinch Salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with Silpat or parchment. Set aside.
  3. In a mixer or by hand combine peanut butter and brown sugar until smooth and creamy.
  4. Add egg, vanilla, baking soda and a pinch of salt. Mix until fully combined.
  5. By heaping tablespoon or standard sized cookie scoop drop dough onto lined cookie sheet.
  6. Use the back of a fork to form a crisscross pattern on each cookie.
  7. Bake for 10-12 minutes until edges are lightly brown.
  8. Allow cookies to cool on baking sheet for 2 minutes before removing to cooling rack.

I just made these! They were amazing! Simplified them a little by just rolling into balls and criss cross with a fork. Baked on my baking stone. Allow them to cool thoroughly so they don't crumble on you! Very soft and chewy, or bake the extra 2 mins and have a little crunchier cookie. :-) They were luvvvved by everyone in the house! Hi Serena.
I'm thrilled with your reference to not having any idea where this recipe first originated. There are so many "original" gluten free authors now it's mind-boggling. And Kraft has even claimed a version of this recipe for the label on their peanut butter. I've been gluten free for more years than i can count now, and "back ion the day" there was precious little info or knowledge of alternative flours and/or grains and forget pre-mixed flours or products. Anyway, after much research and due diligence, i eventually purchased two cookbooks by the same author and never regretted it. This recipe was in the first i believe, originally published in 1990 ~ The Gluten Free Gourmet by Bette Hagman. The second was appropriately titled ;) More from the Gluten Free Gourmet. Bette's work was a true gift and lifesaver to many like myself who had no idea where to turn. I took what she taught me and built on it as have so many others. :)
