I thought I'd share the Basil Almond Pesto recipe we made for today's post Turkey Pesto Paninis.
We debated whether to just buy pre-made pesto from the store but I convinced Colt it was more economical to make our own since we had an over abundance of basil growing in our kitchen at the moment and it really wouldn't add much time in the kitchen.
So I walked him through how easy it is to make Basil Almond Pesto.
It's well worth the few seconds it takes to make pesto, and the leftovers are great tossed with pasta or steamed veggies.
If you make a large batch freeze the excess in ice cube trays for later use.
Sorry for it being a bit late but I hope you enjoy Basil Almond Pesto as much as we do!
Place 1 1/4 cups Fresh Basil into a blender or food processor.
Add 1 clove garlic.
10 whole almonds. You can use 1/4 cup of pine nuts instead but almonds are always a staple in our cupboard and make a delicious pesto.
Blend until almonds are fairly finely chopped.
Slowly drizzle in olive oil and stop blender and scrap down sides of blender or food processor as needed.
Add parmesan cheese and blend until smooth.
(Colt might have forgotten the parmesan cheese and if he did I can tell you it was still amazing.)
Salt and pepper to taste.
