Grannies Banana Luncheon Loaf

For as long as I can remember I've always loved Banana Bread.

Banana Bread, Cinnamon Rolls, Brownies and Chocolate Chip Cookies all made regular appearances in Grannies kitchen growing up.

So when my cousin Kristi told me she had the handwritten recipe for Grannies Banana Luncheon Loaf and was more then happy to send me a copy, I was elated! 

Grannies Banana Bread is a super easy to make loaf.

Banana Bread has always been one of my all time favorites and I don't think I could ever tire of eating it.

The day Lorna was born started out with me and Colt in the kitchen of our little apartment making Banana Bread. My contractions continued to become worse while we were making the loaves until my water broke. 

Being a first time Mom I didn't realize the little trickle of water I was experiencing was my water breaking since I thought it would be a huge gush. So once the loaves went in the oven I had decided to take a hot shower to see if I could lessen the pain and help the contractions subside.

When that didn't work I asked Colt to call the Dr.'s office to see what they wanted us to do. Colt came in the bathroom a few minutes later and said the Dr. wants you to come buy the office unless your water breaks then we need to go directly to the hospital.

In that moment my mind clicked back on and I told him my waters broken and we need to go to the hospital. 

But we had one major obstacle.

My Banana Bread was still baking in the oven and had like 40 minutes left to go. There was no way I was taking a half baked loaf of bread out of the oven to waste.

So I convinced him we had to stay until the Banana Bread was done.

I'm sure at this point he was pretty terrified because I was moving around and horribly uncomfortable with every contraction.  But he knew by this point in our relationship how stubborn I am and there was no hope of getting me to the car until my Banana Bread was done, so we waited.

Thank God we made it to the hospital with plenty of time. We arrived between 3-4 in the afternoon and my sweet girl was born by 8 that night.

The best part was when we returned home from the hospital and had 2 loaves of Banana Bread waiting to be eaten.

Beat 1/2 cup Coconut Oil or Shortening or Butter while slowly adding 1 cup Sugar. Cream mixture well. 

Slowly add 2 whole Eggs one at a time, beating well between each addition.

(Grannies original recipe called for shortening but I decided to use coconut oil instead since it's a healthier alternative to shortening, it turned out wonderfully. I've also used butter with equally delicious results.)

Mash 4 banana's and set aside.

(Grannies original recipe calls for 1 cup banana's but I found using 4 medium/large about 1 1/3cups banana's made a perfectly moist loaf extra banana flavored loaf.)

Add mashed banana's and mix well.

Add:
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 cup Chopped Nuts
 Mix on low speed until combined. Scrape sides of bowl well.

Pour batter into a greased 9"x5"x3" loaf pan. Push batter up into the corners of the pan leaving the center slightly hollowed.

I sometimes will sprinkle additional chopped nuts over the top to make it pretty.

For a well rounded loaf allow batter to rest 20 minutes while preheating oven to 350 degrees.  

Bake Banana Luncheon Loaf for 60-70 minutes or until a tooth pick or skewer inserted into the center of loaf comes out clean.

(I've never heard of allowing the batter to rest for 20 minutes before baking, but it makes a gorgeous loaf.)

I'm so thankful my cousin shared Grannies recipe with me. It will always be a treasured favorite that reminds me with every bite of many wonderful memories of her in the kitchen.

This is one of those recipes you'll cherish forever. It makes a perfect loaf of Banana Bread.

Grannies Banana Luncheon Loaf. A perfectly moist easy to make loaf of banana bread. A classic old recipe passed down from my Granny.

ingredients:

  • 1/2 cup Coconut Oil Or Shortening Or Butter (Original recipe calls for shortening.)
  • 1 cup Sugar
  • 2 whole Eggs
  • 4 whole Medium/Large Banana's Mashed (about 1 1/3 cups.)
  • 2 cups All-Purpose Flour (I used 1 cup whole wheat pastry flour and 1 cup unbleached all purpose flour)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Chopped Nuts, Optional Plus additional for top

How to cook Grannies Banana Luncheon Loaf

  1. Grease a 9"x5"x3" loaf pan.
  2. Beat coconut oil or shortening or butter while slowly adding sugar. Beat until well creamed.
  3. Add eggs one at a time beating well between each addition.
  4. Add mashed bananas and blend well.
  5. Add flour, baking powder, baking soda, salt and nuts. Mix on low speed until blended.
  6. Pour banana bread batter into greased loaf pan. Push batter into the corners of the loaf pan leaving the center slightly hallowed. Sprinkle the top with additional nuts if desired.
  7. For a well rounded loaf allow batter to rest 20 minutes before baking.
  8. While batter rests preheat oven to 350 degrees.
  9. Bake bread for 60-70 minutes or until a toothpick inserted into the center of loaf comes out clean.
  10. Allow loaf to cool completely before slicing.
