I made this Alphabet Vegetable Soup last night because it's always a family favorite and it's been so cold outside..
I love that it's loaded with veggies, perfect for meatless Mondays and a great way to use up any leftover veggies in the fridge.
The kids love to play with the letters and seem to forget just how much vegetables they're consuming.
We spent the better half of dinner playing with our food and building words.
After all we are big kids at heart!

I was lucky enough Colt snapped a picture of the green beans so we aren't totally picture-less.
We used fresh green beans and cut then into bite size pieces but frozen would work well too. It's one of those soups that are easy to adjust to what you have on hand.
Here's how to make Alphabet Soup or you can grab the printable recipe at the bottom:
Add to a large soup pot:
- 1 tablespoon Olive Oil
- 1/2 whole Diced Onion
Add:
- 3 cloves Garlic, Minced
Stir in:
- 6 cups Chicken Stock or Vegetable Stock
- 2 cups Water
- 5 stalks Celery, Diced
- 2 cups Diced Carrots
- 1 1/2 cups Diced Potato
- 29 ounces Canned Tomatoes
- 1/3 lb Green Beans, Cut Into Bite Size Pieces
- 1 cup Peas (Fresh or Frozen)
- 1 cup Corn (Fresh or Frozen)
- 1 teaspoon Granulated Garlic
- 1 tablespoon Italian Seasoning
- 1 teaspoon Rosemary
- 1/4 teaspoon Salt
- 1 cup Alphabet Pasta
Stir until well combined. Bring to a simmer reduce heat to low, cover pot and cook for 20 minutes or until carrots, potatoes and pasta are tender.
Taste Alphabet Vegetable Soup. Add additional salt and pepper to taste.
Alphabet Pasta can be located with the other pasta at the grocery store. It's usually in a small box near the specialty style pastas where I shop. I've also seen it on occasion in the bulk pasta area if the store has one.
Who can resist a hearty bowl of veggies filled with tons of letters to bring back fun memories of childhood.
Young and old alike will absolutely love Alphabet Soup!
The kids scarfed down the Alphabet Soup but I was lucky to have a little bit leftover for lunch the next day.
Oh, and I almost forgot this soup is low calorie with only 213 calories for a generous serving!
Perfect for any New Years resolutions to eat a little bit healthier.

- 29 ounces Stewed Tomatoes, Diced
- 1 teaspoon Granulated Garlic
- 1 tablespoon Italian Seasoning
- 1 teaspoon Rosemary, Chopped
- 1/4 teaspoon Salt
- 1 cup Alphabet Shaped Pasta
- Salt and Pepper to Taste
Instructions
How To Make Alphabet Soup
- Heat olive oil over medium-high heat and add onion.
- Sauté onions until starting to caramelize.
- Add garlic and stir until softened and fragrant.
- Add all remaining ingredients and stir until well combined. Bring soup to a simmer and reduce heat to low.
- Cover and cook for 20 minutes or until potatoes, carrots and pasta are tender.
- Season with additional salt and pepper to taste.

Best soup I have ever had! Definetly a family favourite;)
This is so very good. I made this last night and we had just barely enough leftover for 2 bowls. I made this in my electric pressure cooker and just waited until after the pressure was released to add the pasta. I didn't want the pasta to dissolve or get really mushy by having it in for the entire time the soup was cooking. I'm going to play a little with this recipe and try out vegetable broth next time (used chicken this time) and try adding in some fresh garden veggies (squash, zucchini, etc) in the summer.
