I saw I Want To Marry You Cookies a few weeks back over on Chris's blog The Cafe Sucre Farine and I knew I had to try them. I mean who can resist making cookies filled with semi-sweet chocolate, white chocolate, oatmeal and pecans in a buttery chocolate chip cookie?
When LJ was asking to make cookies I thought it would be the perfect excuse to make I Want To Marry You Cookies and tease him that we need to work on his cookie making skills because someday when he meets the right girl he'll need to make her I Want To Marry You Cookies to win her over.
We browned the butter a bit in these cookies even though the original recipe doesn't call for it, because everything taste better with brown butter, and tweaked the recipe slightly using a few tricks from Perfect Chocolate Chip Cookies.
If you like white and dark chocolate, oatmeal and just a hint of cinnamon these cookies are for you.
They are amazing!
In a medium sized sauce pan brown 3/4 cup butter until light brown and nutty smelling.
Add brown butter to mixer along with remaining 1/4 cup cold butter. Mix on low speed until butter is melted.
Be warned once you consume brown butter cookies your life will be altered forever!
Add both sugars and vanilla.
Mix until until well combined. Scrape the sides of bowl as needed.
Mix one whole egg and 1 egg yolk.
Add egg to sugar mixture while mixing on medium low speed.
Beat on medium-high speed for 30 seconds. Allow to rest for 3 minutes and beat on medium-high speed for another 30 seconds. Repeat until batter is thick and pale yellow.
This usually happens by the second 30 second beating.
Add salt, baking soda and cinnamon. Mix on medium-high speed until well combined.
Add flour and rolled oats.
Mix until well combined.
Add semi-sweet chocolate chips, white chocolate chips and nuts if using. Mix until well combined.
Roll into medium sized balls onto a Silpat or parchment lined baking sheet.
If your in the mood you can add extra chocolate chips and nuts. LJ made a smiley face for me, love that kid!
Freeze cookie dough for 10 minutes and bake in a 325 degree oven for 14-18 minutes until lightly brown around the edges.
Note: We tried baking a batch of cookies without freezing and found the cookies where a little more crispy on the edges and soft in the center when frozen. The dough freezes well and could be frozen to have small batches of fresh baked cookies for later.
These are the perfect cookies to go with a large glass of milk.
Or to snack on by themselves.
Someday some lucky girl will feel blessed to receive a box of cookies from my son but I gave him a fair warning he can't just go sharing these cookies with just any girl on the play ground.

- 1 1/4 cup Brown Sugar
- 1/2 cup Granulated Sugar

- 1 cup Semi-Sweet Chocolate Chips Or Dark Chocolate, Plus Extra For Decorating If Desired
- 1 cup Pecans Or Walnuts, Chopped Plus Extra For Decorating If Desired

How to cook I Want To Marry You Chocolate Chip Cookies
- Preheat oven to 325 degrees.
- In a medium sized sauce pan brown 3/4 cup of butter over medium heat until light brown and nutty smelling.
- Add brown butter to a mixing bowl and add remaining 1/4 cup cold butter. Mix on low speed until butter is melted.
- Add both sugars and vanilla. Mix until blended.
- Mix whole eggs with egg yolks and add to brown butter/sugar mixture.Beat on medium high speed 30 seconds. Let mixture rest 3 minutes. Mix another 30 seconds and rest for 3 minutes repeating until butter mixture becomes thick and pale yellow.
- Add salt, baking soda, and cinnamon. Mix for 30 seconds. Scrape down the sides of bowl.
- Add flour and rolled oats and mix until well combined.
- Add white chocolate chips, semi-sweet chocolate chips and nuts if using. Mix until well combined.
- Scoop medium sized balls of dough onto a Silpat or parchment lined baking sheet. Press additional chocolate chips and nuts into balls if desired and freeze for 10 minutes.
- Cookies can also be pre-scooped and frozen to be baked later fresh out of the oven at a later time.
- Bake for 14-18 minutes until cookies are lightly browned around the edges.
- Allow cookies to cool for 3 minutes on baking sheet before removing to a cooling rack.
