Happy Mother's Day to all the wonderful Mother's out there! I am excited to be joining Sunday Supper this week to share Frozen Strawberry Cheesecake for Mother's Day.
I just love Frozen Strawberry Cheesecake because it's great to make ahead of time since it's frozen. The strawberry cheesecake filling is so good! It's super creamy and melts in your mouth like ice cream with the best graham cracker crust.
A dollop of fresh homemade whipped cream really puts this dessert over the top!
In a large bowl combine:
- 12 whole Graham Cracker Crumbs
- 1/4 cup Sugar
Press graham cracker mixture evenly across the bottom and up the sides of the pie plate.
I find a measuring cup works well for pressing the crumbs evenly into the bottom and sides.
Bake crust in a 375 degree oven for 7 minutes or until lightly brown.
Cool completely.
In a food processor or blender puree 1 1/2 cups Strawberries until smooth but still some small pieces remain. Set aside.
Whip 3/4 cup whipping cream until light and fluffy but not stiff. Set aside.
Beat:
- 16 ounces Cream Cheese
- 3/4 cup Sugar
- 1 teaspoon Lemon Zest
Add pureed strawberries and 1 teaspoon vanilla to beaten cream cheese mixture.
Beat until well combined, scraping sides and bottom of bowl several times.
On low speed add whipping cream and mix or fold in until combined.
Pour cheesecake mixture into baked graham cracker crust and place in freezer.
Freeze for 4 hours or longer until frozen.
Slice Frozen Strawberry Cheesecake with a knife run under hot water and dried.
Serve with a big dollop of whip cream and make sure to share with the ones you love.

Absolutely gorgeous, Serena! Pinned! And as beautiful as your cheesecake - if not more beautiful - are the loving memories of your grandmothers and mother <3
It sounds like you were blessed to have so many lovely women in your life. It must have been a difficult decision for your mother to have you live with your grandparents. The strawberry freezer pie is a sweet way to celebrate them.
Mom and I would be able to demolish one of these no problem!
I wish I could reach through my computer and grab a slice! Sounds wonderful!

Wow! What a beautiful cheesecake. I love all the fresh strawberries included.
This frozen cheesecake is beautiful and it looks irresistibly delicious! It sounds like you had several influential women in your life. I admire you for emphasizing all the good things that they brought to your life. Thank you for sharing that.
My mom has done anything and everything for me, and she continues to. My granny was also amazing to me, and I miss her everyday since she died seven years ago.
This cheesecake looks delightful!
Mmmm, frozen strawberry cheesecake sounds glorious right now! Wish I had a slice!! :) Pinned!
This dessert is so delicious! My neighbor even brought me over some strawberries so I would make another one....and I have already made him two. My only issue that I am having is the crust is so hard to cut. I tried not pressing the crust down so hard the last time I made it. It was a little easier to cut but still hard. Is there something I can do to make the crust a bit easier to cut? I use a hot dry knife. Maybe my freezer is too cold? Maybe I should thaw it out a bit before I cut? Any suggestions? Love the recipe!!
Thank you so much! Yes, you can let it sit out for 10-15 minutes on the counter and that should help with cutting. Thanks, Serena
I have a ton of frozen strawberries. Do I have to defrost before using them, or can I do the recipe with the strawberries frozen? Thank you.
You'll probably need to at least partially defrost them so they puree. Thanks, Serena
I can't wait to make this but what is pureed vanilla extract
It was an error. It should have said Pure Vanilla Extract. Sorry for the confusion.
