 Strawberry Rhubarb Coffee Cake is the perfect beginning or end to any day. It's an absolute must when ripe strawberries and rhubarb become abundant to make but also delicious made with frozen fruit. The tart rhubarb makes the perfect compliment to juicy sweet strawberries.  A light fluffy sour cream coffee cake is filled with a thick ribbon of strawberry rhubarb filling and topped off with a buttery cinnamon brown sugar crumb. Whether you make it for breakfast, brunch, mid day tea or dessert it's guaranteed to be a hit.

This recipe goes out to all my Strawberry Rhubarb Coffeecake lovers out there.

One of the first food related things I learned about Colt years ago was he loves rhubarb so I quickly learned how to make Rhubarb Pie and Crisp to keep him content.

This Strawberry Rhubarb Coffeecake is no exception to his favorites list with it's light and moist layer of cake filled with sweet and tangy strawberry rhubarb filling then topped with a layer of brown sugar cinnamon crumb topping for the perfect balance of flavors.

What's not to love?

I might have enjoyed a slice for breakfast, and dessert because I couldn't think of a better beginning or ending to the day.It pairs perfectly with a hot cup of coffee or a scoop of vanilla ice cream.

Here's how to make this delicious Strawberry Rhubarb Coffee Cake Recipe:

Strawberries, Rhubarb, Sugar, Cornstarch, and Water in a small saucepan.

To make Strawberry Rhubarb Filling in a medium sized saucepan stir together:
  • 3 cups Sliced Rhubarb
  • 2 cups Chopped Strawberries
  • 1/2 cup Sugar
  • 1/3 cup  Cornstarch
  • 2 tablespoon Water
Stir together until well combined.

Strawberry Rhubarb Filling for Coffee Cake

Cook over medium heat while stirring for about 5 minutes until cornstarch starts to cook and thicken but rhubarb is still firm.

Set Strawberry Rhubarb Filling aside to cool.

Brown Sugar, Flour, and Cinnamon in a mixing bowl fitted with a paddle attachment.

To make the Brown Sugar Cinnamon Crumb in a large bowl combine: 
  • 1 1/3 cups Brown Sugar
  • 3 tablespoons All-Purpose Flour or Whole Wheat Pastry Flour
  • 1 teaspoon Cinnamon
Mix until combined.

Brown Sugar Flour mixture in a mixing bowl with cubes of butter on top for Coffee Cake topping.

Cut 4 tablespoons of cold butter into chunks and mix on low speed until well combined.

Alternatively you could use your fingers and work the butter into the sugar mixture. Until evenly combined and crumbly.

Brown sugar mixture should stick together when squeezed with fingers. Move to a medium sized bowl and set aside.

Butter and sugar creamed together in a stainless steel mixing bowl for Strawberry Rhubarb Coffee Cake.

To make the cake in a large mixing bowl cream together:
  • 3/4 cup cold Butter
Slowly add 1 1/2 cups Granulated Sugar while mixing on medium speed.

(The cold butter helps add volume to the batter and holds it's texture better making for a lighter cake.)

Beaten butter and sugar with a whole egg sitting in the center for Strawberry Rhubarb Coffee Cake batter.

Scrape sides of bowl and add 4 eggs one at a time, beating well between each addition.

Then add 2 teaspoons Vanilla.

Batter should be looking light and fluffy at this point.

Add: 
  • 1 1/2 teaspoon teaspoon Baking Soda
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Sea Salt
Mix until well combined and scrape bowl well to evenly distribute.

Add 3 cups All- Purpose or Whole Wheat Pastry Flour 1 cup at a time alternating with 1 1/2 cups Sour Cream (1/2 cup at a time.)

Mix on low speed between each addition until just combined, being careful not to over mix.

I might be weird but I love the look of a gorgeous cake batter!

Strawberry Rhubarb Coffee Cake batter spread in the bottom of a 9"x13" pan.

I like to butter a 9"x13" pan and line with parchment paper. Butter parchment paper well.

(If parchment paper isn't available you can butter pan well.)

Spread half of cake batter over the bottom of the cake pan.

Strawberry Rhubarb filling spread over the top of cake batter in a 9"x13" pan.

Spread all of the strawberry rhubarb mixture over the batter.

Spread remaining cake batter evenly over the top.

Brown Sugar Crumb spread over the top of Strawberry Rhubarb Coffee Cake.

Take Brown Sugar Crumb and squeeze between fingers to make crumbs, spread evenly over the top of cake..

Baked Strawberry Rhubarb Coffee Cake in a pan and dusted with powdered sugar.

Bake in a 350 degree oven for 50-60 minutes or until a toothpick inserted into center of cake comes out clean.

Cool completely and sprinkle with powdered sugar.


The perfect slice of cake for any occasion with it's a gorgeous pink Strawberry Rhubarb filling and warm brown sugar crumb topping.

Ingredients

Strawberry Rhubarb Filling
  • 3 cups Rhubarb Sliced 1/4" Thick
  • 2 cups Strawberries, Diced
  • 1/2 cup Granulated Sugar
  • 1/3 cup Cornstarch
  • 2 tablespoons Water
Brown Sugar Crumb
  • 1 1/3 cup Brown Sugar
  • 3 tablespoons All-Purpose or Whole Wheat Pastry Flour
  • 1 teaspoon Cinnamon
  • 4 tablespoons Cold Butter, Diced
Coffee Cake Batter
  • 3/4 cup Cold Butter
  • 1 1/2 cups Granulated Sugar
  • 4 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 1 1/2 teaspoons Baking Soda
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 3 cups All-Purpose Flour Or Whole Wheat Pastry Flour
  • 1 1/2 cups Sour Cream
  • Powdered Sugar For Dusting

Instructions

How To Make Strawberry Rhubarb Coffee Cake
  1. Preheat oven to 350 degrees. Butter a 9"x13" pan and line with parchment paper. Butter parchment paper well and set aside.
Strawberry Rhubarb Filling
  1. In a medium sized saucepan add rhubarb, strawberries, granulated sugar, cornstarch, and water. Mix until well combined.
  2. Heat over medium heat and stir for about 5 minutes or until cornstarch starts to thicken but rhubarb is still firm.
  3. Remove from heat and set aside.
Brown Sugar Crumb
  1. In a large bowl combined brown sugar, 3 tablespoons flour and cinnamon.
  2. Mix until well combined.
  3. Add 4 tablespoons cold butter diced and mix on low speed until well combined and crumbly.
  4. Remove to a medium sized bowl and set aside.
Coffee Cake Batter
  1. Add 3/4 cup cold butter to mixing bowl and beat until smooth and creamy. Slowly add sugar while beating at medium speed until light and fluffy.
  2. Add eggs one at a time beating well between each addition. Scrape sides of bowl between each egg.
  3. Then add vanilla and mix well.
  4. Add baking soda, baking powder, and salt. Beat on medium-high speed until well combined. Scrape sides of bowl.
  5. Add flour 1 cup at a time alternating with 1/2 cup sour cream mixing on low speed until just combined being careful not to over mix and all of flour and sour cream is added.
Assemble Strawberry Rhubarb Coffee Cake
  1. Spread half of the cake batter into the bottom of prepared pan and spread to the edge.
  2. Cover evenly with strawberry rhubarb filling and spread to the edge.
  3. Spread with remaining cake batter and spread evenly.
  4. Press brown sugar crumb topping between fingers to form crumbs and distribute evenly over the top of the cake.
  5. Bake for 50-60 minutes or until a toothpick inserted into the center of cake comes out clean.
  6. Allow cake to cool completely.
  7. Dust with powdered sugar before serving.

Your man knows his food! Rhubarb and ice cream is unbeatable! This coffee cake is not only so pretty with the layers, the flavor combo sounds absolutely delicious!

Oh my goodness, this looks heavenly! That topping looks to die for, and I love the thick ribbon of strawberry rhubarb filling running through the center of the cake (so many coffee cakes I've seen have a great topping, but then the cake itself is rather nondescript, with nothing interesting punctuating its texture). I'll definitely have to give this a try!

I made it vegan by using egg substitute, vegan margarine, and coconut milk vs sour cream. Added about 1/2 cup more flour to make less runny. Amazing result - big fluffy delicious cake! Awesome recipe! Thx

Prep time was a little understated. I used convection bake and it took about 70 minutes. The cake is fantastic! I thought a little heavy on the topping but husband absolutely loved it. Thanks for a great recipe.

Made it vegan with vegan butter, half a banana, 1/4 c apple sauce and 2 egg replacers. Subbed sour cream for vegan yogurt, just had mixed berry flavour, pretty darn good.
