Strawberry Mojitos are a favorite easy to make summertime cocktail recipe made using fresh strawberries, mint, lime, white rum, and sparkling water.
Our garden became over run with mint over this last year since I've pretty much given up any form of bending and stooping (meaning no gardening), in hopes that at some point me and my back will have a normal relationship where I don't wish to remove half of it.
Any who.... Sorry I didn't mean to start rambling on about my dysfunctional back again..
So back to the story at hand Colt spent the better half of the day pulling mint that was about 4 feet tall in a good 4x10 section to plant the tomatoes and a few other things a week or two back.
For now the mint is gone but let me warn you..
NEVER PLANT MINT IN AN OPEN BED!
Or all you will have is a bed of mint and it's a pain in the patootie to remove.
It over took everything! I strongly suggest mint as a container only plant.
So Colt then put some of our mother load of mint to use making these Strawberry Mojitos which just happen to be one of our favorite summer time cocktails and a few mocktails for the kids.
Here's how to make Strawberry Mojitos:
In a glass add:
- 1 shot White Rum
- 4 whole Strawberries with stems removed
- 4 whole Mint Leaves
- 1 tablespoon Sugar
For a mocktail omit the rum.
Muddle the mixture together until the strawberries are macerated.
Add juice from 1/2 a Lime and 1/4 of a Lime Sliced. Muddle together.
Add Ice and top off with Club Soda or Sparkling Water.
Colt doubled the recipe and then poured the mixture into the glasses.
This recipe can easily be made as a pitcher drink just increase the amounts needed and add ice to glasses when serving.

- In a glass muddle together rum, strawberries, mint leaves, and sugar, until strawberries are macerated.
- Add lime juice and slice lime. Muddle together a few times to break down sliced lime.
- Add ice and top off with sparkling water or club soda.
- Garnish glass with lime wheels, mint, and strawberries.
