Crockpot Hamburger Soup

If you're looking for an easy dinner recipe look no further Hamburger Soup that is loaded with ground beef, vegetables like onions, tomatoes, celery, carrots, potatoes, green beans, corn, and cabbage in a beefy well seasoned soup base. Hamburger Vegetable Soup is a family favorite made in the Crockpot or stove top. It's almost a dump it and forget it lunch or dinner except needing to brown the ground beef. It is delicious reheated for lunch and leftovers can be frozen.

Hamburger Soup is delicious served with French Bread Dinner Rolls, Potato Rolls or Dilly Bread

I made Crockpot Hamburger Vegetable Soup last weekend. I'm one of those people who loves soup year-round, but when the weather drops below 50 it's a must have in our house! We eat soup multiple times a week this time of year.

I love Hamburger Soup for numerous reasons but my top 3 are:
  1. It's the perfect use for whatever leftover veggies you need to use up in the fridge. 
  2. I almost always have something on hand to make this come together.
  3. It's super easy, comforting, and healthy enough to be considered diet food without having to diet, because no one wants to diet! 
If I think the word diet I almost have to run and grab a cake to counteract the thought.. So we can just call this soup healthier eating.

Warm, comforting, and delicious.. Here's the recipe:

Cooked ground beef and onion in pan.

In a large sauté pan or soup pot if making on the stove top add 1 tablespoon Olive Oil, and heat until hot. 

Add 1 whole Diced Onion, and cook until starting to caramelize.

Add 1 pound Ground Beef, and break beef up until brown. 

Stir in 4 cloves Minced Garlic, and cook until softened. Drain excess oil, and add Hamburger Mixture to Crock Pot or keep in soup pot if making on stove top.

In a large Crock Pot add:
  • 4 cups Beef Stock
  • 2 cups Water
  • 28 ounces Diced Tomatoes
  • 4 stalks Diced Celery
  • 5 whole Diced Carrots
  • 1 1/2 cups Diced Russet Potatoes
  • 2 cups Cut Green Beans
  • 1 1/2 cups Corn
  • 3 cups Chopped Green Cabbage
  • 15 ounces Drained Kidney Beans
  • 6 ounces Tomato Paste
  • 2 tablespoon Worcestershire Sauce
  • 2 teaspoon Granulated Garlic
  • 1 1/2 teaspoon Rosemary
  • 1 1/2 teaspoon Oregano
  • 1 1/2 teaspoon Basil
  • 1 teaspoon Salt
Mix until well combined. Cover and cook on high for 6 hours or 8-10 hours on low.

Taste soup. Add additional Salt and Pepper to taste.

Ingredients

  • 1 tablespoon Olive Oil
  • 1 whole Onion, Diced
  • 1 pound Ground Beef
  • 4 cloves Garlic, Minced
  • 4 cups Beef Stock
  • 2 cups Water
  • 28 ounces Diced Tomatoes
  • 4 stalks Celery, Diced
  • 5 whole Carrots, Diced
  • 1 1/2 cups Russet Potatoes, Peeled and Diced
  • 2 cups Green Beans, Cut
  • 1 1/2 cups Corn
  • 3 cups Cabbage, Chopped
  • 15 ounces Kidney Beans, Drained
  • 6 ounces Tomato Paste
  • 2 tablespoon Worcestershire Sauce
  • 2 teaspoon Granulated Garlic
  • 1 1/2 teaspoon Rosemary
  • 1 1/2 teaspoon Oregano
  • 1 1/2 teaspoon Basil
  • 1 teaspoon Salt
  • Additional Salt and Pepper to taste once cooked.

Instructions

  1. In a large sauté pan or soup pot heat olive oil. Add onion, and saute until starting to caramelize. Add hamburger meat, break up, and brown. Stir in minced garlic, and cook until softened.
  2. In a large Crock Pot or to soup pot add hamburger mixture, and all other ingredients. Stir until well combined. Cover and cook for 6 hours on high or 8 hours on low. For stove top cook 2 1/2 hours on low.
  3. Taste soup, add additional salt and pepper to taste.
