The first time I had Blueberry Salsa was over Fish Tacos when Colt and I were having a date night and I instantly fell in love with the sweet blueberries paired with the spiciness of the jalapeño, and cilantro. There's something about good food that just lingers in my mind making it hard to forget, and this Blueberry Mango Salsa is one of those you won't quickly forget!
So for Sundays big game I made Blueberry Mango Salsa, to go with the Fish Tacos Colt made. It's also a favorite when we make Quick Shrimp Tacos or even Breakfast Burritos! We also like to keep it in the fridge as a healthy snack, and it makes a great topping for chicken, and fish.
We decided to try out a video and step-by-step photo instructions since some of you indicated on Facebook awhile back you like both! Please leave me a comment, and let me know what you prefer.
So here's the recipe for one of our favorite salsas!
Dice 2 whole Large Mangoes.
Slice 1 whole Jalapeño, remove the seeds, and dice finely.
Add 2 cups Fresh Blueberries.
Add 1/2 whole Chopped Red Onion.
1/2 whole Bunch Cilantro Chopped.
Add juice of 2 Limes, 1/2 an Orange Juiced, 1/2 teaspoon Chili Lime Seasoning, 1/2 teaspoon Salt, and mix until well combined. Refrigerate until cold.
Note: I found Chili Lime Seasoning at Trader Joes but a common brand is called Tajin and can usually be found in the Mexican Food Section of the grocery store.
Serve on chips, over tacos, in burritos, on fish, or chicken! A mouthgasm in every bite!

It is a magical combination. I am not a fish fan, but I would put this over black bean tacos in a heartbeat!
