Oven Roasted Artichokes

Roasted Artichoke baked in the oven with garlic and lemon is a delicious way to make artichoke hearts everyone loves. These make a wonderful appetizer or side dish and are great for parties.

Oven Roasted Artichokes let me count the way I love uuuuuuu...

You guys, if you love artichokes as much as I do, and you've never had a lemony garlicky Oven Roasted Artichoke; let me tell you, you're missing out MEGA! 

Colt knows I absolutely adore artichokes, so he purchased a few for Mothers Day. We decided to roast them with lemon, and garlic. It was like a dance party in the mouth.

They would be great as an appetizer, or side, but we like them just because. I really don't need an excuse to enjoy these!

First things first, remove the small lower leaves, trim off the bottom, and cut the tips off the artichoke leaves. 

Rub generously with lemon all over to prevent browning.

Cut artichokes in half, and scoop out the fuzzy choke using a small spoon. 

Rub lemon all over to prevent browning.

Preheat oven to 375 degrees degrees. 

Place slices of 1-2 lemons in a baking pan just large enough to fit artichokes snugly, and 6-8 cloves of garlic. 

Add artichokes, and drizzle generously with about 1 tablespoon Olive Oil. Give a generous pinch of Salt to each artichoke. 

Massage olive oil all over artichoke, lemon, and garlic.

Turn cut side down on top of cut lemons, and garlic. 

Cover with foil, and cook for 50-60 minutes, until artichoke hearts are tender when pierced.

These are so good you really don't need anything to even dip them in.

Maybe just a little squeeze of lemon over the top.

But if you're a dipper, you can always use a little melted butter, or aioli sauce.

No matter what you do, just make sure to smash the roasted garlic over the top of the hearts.

Oven Roasted Artichoke Hearts

Ingredients

  • 4 whole Artichokes
  • 3 whole Lemons, Sliced
  • 8 cloves Garlic, Peeled
  • 6 tablespoons Olive Oil
  • 8 pinches Salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Remove the small lower leaves, trim off the bottom, and cut the tips off the artichoke leaves. Rub generously with lemon all over to prevent browning.
  3. Cut artichokes in half, and scoop out the fuzzy choke using a small spoon. Rub lemon all over to prevent browning.
  4. Pick a pan just large enough to fit artichoke hearts. Place lemon slices, garlic cloves, and artichokes in pan. Drizzle generously with olive oil all over. Give a generous pinch of salt to each artichoke. Massage oil into both sides of artichokes, garlic, and lemon.
  5. Place artichokes cut side down, on top of lemons, and garlic. Cover with foil, and bake 50-60 minutes or until artichoke hearts are tender when pierced.
  6. Squeeze fresh lemon over the top, and enjoy plain, or with your favorite dip.
