Let the holiday baking commence! I love making Banana Coconut Chocolate Chip Bread to send a loaf over to the neighbors or add to the holiday treat trays. It's also the perfect addition to Christmas morning, or just to snack on throughout the day.
When the kids saw what I was making they couldn't wait to cut into it! It's probably one of their most favorite loaves I make. It took all I had to keep them from eating the loaf before Colt grabbed a photo. Colt and I were lucky we had a slice before they devoured the rest.
Luckily I almost always have several loaves worth of ripe bananas needing to be used in the freezer. I had also just stocked up on my favorite O Organics® Semi-Sweet Chocolate Chips, Unsweetened Shredded Coconut, Coconut Oil, and other baking supplies at my last trip to Safeway, so I can make a few more loaves. Banana Coconut Chocolate Chip Bread is adapted from my Granny's Banana Luncheon Loaf so you know it's delicious!
First you need 1/2 cup O Organics Virgin Coconut Oil.
I always keep this on hand not just for baking, but also miscellaneous things like dry skin or it works great to remove makeup. Just make sure not to get it in your eyes.
Beat in 1 cup O Organics Granulated Sugar, until well creamed.
Beat in 2 whole Eggs, one at a time until well combined.
Mash 4 whole Medium Sized Ripe Bananas. This equals about 1 1/3 cup Mashed Bananas.
Add mashed banana, and 1 teaspoon Vanilla Extract to sugar mixture, and beat until well combined.
Add 1 cup O Organic Unsweetened Shredded Coconut to bowl.
Add 2 cups All-Purpose Flour, 1 teaspoon Salt, 1 teaspoon Baking Powder, and 1/2 teaspoon Baking Soda. Stir until well combined.
Add 3/4 cup O Organics Semi-Sweet Chocolate Chips, and 1/2 cup Chopped Nuts.
Stir until well combined.
Grease a 9"x5"x3" Loaf Pan with additional Coconut oil. Add batter to pan. Sprinkle loaf with an additional 2 tablespoons each of Chocolate Chips, and Chopped Nuts.
Allow loaf to rest for 20 minutes while oven preheats to 350 degrees for a well rounded loaf. Bake bread for 60-70 minutes, or until a toothpick inserted in center of loaf comes out clean.
Allow loaf to cool completely before slicing.

ingredients:
- 1/2 cup O Organics Coconut Oil, Plus More For Greasing Pan
- 1 cup O Organics Granulated Sugar
- 2 whole Eggs
- 4 whole Medium Sized Bananas, Mashed
- 1 teaspoon Vanilla Extract
- 1 cup O Organics Unsweetened Shredded Coconut
- 2 cups All-Purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 3/4 cup O Organics Semi-Sweet Chocolate Chips, Plus More For Top
- 1/2 cup Chopped Nuts, Plus More For Top
instructions
- Grease a 9"x5"x3" loaf pan with coconut oil, and set aside.
- Cream together coconut oil, and sugar.
- Add eggs one at a time. Beat well between each addition.
- Stir in mashed bananas and vanilla extract, until well combined.
- Add shredded coconut, flour, salt, baking powder, and baking soda. Stir until well combined.
- Stir in chocolate chips, and nuts.
- Spread batter in loaf pan. Sprinkle with an additional 2 tablespoons each of chocolate chips, and chopped nuts.
- Allow loaf to rest for 20 minutes while oven preheats to 350 degrees for a well rounded loaf.
