Cajun Shrimp Sausage Pasta is one of my easy go to 30 Minute Meals that helps ensure at the end of a busy day we still have time to sit down and enjoy dinner together as a family. It's amazing how much conversation happens in our house each night at the dinner table. I think it's one of the most important rituals we do in our house.
Here's how I make Cajun Shrimp Sausage Pasta...
In a large deep skillet or pot add 2 tablespoons Olive Oil, and heat until hot. Add 1 1/2 pounds Peeled Shrimp.
Cook shrimp for 2-3 minutes per side until bright pink. Remove from pan and set aside.
Add 1/2 whole Diced Onion, and 8 ounces Sliced Smoked Andouille Sausage. Cook until onion is softened, and sausage is lightly brown.
Add 1 whole Diced Bell Pepper, 1/8th-1/4 teaspoon Cayenne Pepper, 1/2 teaspoon Dried Rosemary, 1/2 teaspoon Dried Thyme, 1/2 teaspoon Dried Oregano, 1/2 teaspoon Smoked Paprika, and 1/2 teaspoon Salt.
Stir in 16 ounces Dried Pasta like Penne, and 4 cups Chicken Stock.
Add 1 cup Heavy Cream or Half and Half.
Bring to a simmer, cover, reduce heat to low, and cook for 13 minutes. Remove lid and cook an additional 2-3 minutes, until sauce is thickened.
Remove from heat. Stir in 1 1/2 cups Fontina Cheese (if it's smoked fontina it's all the better), and Cooked Shrimp. Stir until cheese is melted.
Cajun Shrimp Sausage Pasta is so good! Easy, saucy, cheesy deliciousness!
You can garnish with a little chopped parsley for color if you happen to have some in the fridge.

Ingredients
- 2 tablespoons Olive Oil
- 1 1/2 pounds Shrimp, Peeled
- 1/2 whole Onion, Diced
- 8 ounces Smoked Andouille Sausage, Sliced
- 1 whole Bell Pepper, Diced
- 1/8th-1/4 teaspoon Cayenne Pepper (The more the hotter.)
- 1/2 teaspoon Rosemary, Dried
- 1/2 teaspoon Thyme, Dried
- 1/2 teaspoon Oregano, Dried
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Salt
- 16 ounces Dried Pasta like Penne
- 4 cups Chicken Stock
- 1 cup Heavy Cream or Half and Half
- 1 1/2 cups Fontina Cheese, Shredded
- Chopped Parsley For Garnish (optional)
Instructions
- In a deep skillet or large pot with a lid heat olive oil over medium-high heat until hot. Add shrimp and cook until pink. Remove shrimp from pan, and set aside.
- Add onion and sausage to pan. Cook until starting to brown.
- Stir in bell pepper, spices, salt, pasta, chicken stock, and cream. Mix until well combined.
- Bring to a simmer, cover, and reduce heat to low. Cook for 13 minutes.
- Remove lid and cook an additional 2-3 minutes until sauce is thickened.
- Remove from heat. Stir in fontina cheese and cooked shrimp. Stir until cheese is melted and shrimp heated through.
- Garnish with chopped parsley if desired.

This is like a spicy jambalaya but with pasta. I absolutely love it and can't wait to make it. It's going to be a huge hit in this house.
