Korean Beef Short Ribs

Korean Beef Short Ribs also known as Galbi are one of our favorite things to throw on the BBQ in the summer. Asian Pear imparts a sweetness to the Korean short rib marinade for a delicious balance of sweet and tangy with plenty of garlic, ginger and toasted sesame seed oil. To make the ribs you will need the Flaken Style Short Ribs from the grocery store. If they don't have any out I can usually ask someone behind the meat counter to have them cut. 

Korean Short Ribs turn out so tender and will quickly become a regular on the dinner rotation.

Galbi also known as Korean BBQ Short Ribs or Kalbi are a favorite in our house. When the weathers really bad outside we've been known to throw these under the broiler to get a good caramelization, but they are really best over a charcoal grill if you have the option. 

We used to buy Korean BBQ Short Ribs pre-marinated from our local grocery store, but Galbi marinade is super easy to make and this way I know exactly what is in it. 

Sometimes it's a little hard to find the Flaken Style Beef Short Ribs, but if I ask they are usually more then happy to cut them for me. 

We usually serve these with Sticky Rice or Fried Rice and a Spicy Asian Cucumber Salad I plan on sharing soon. Maybe even some quickly Stir Fried Green Beans or Asparagus with sesame seed oil and sesame seeds.

First you'll need a large Ripe Asian Pear. They are pretty easy to find at the grocery store anymore.

In a blender add:
  • 1 whole Peeled and Cored Asian Pear
  • 1/2 whole Medium Onion, Diced
  • 1" piece Peeled Ginger
  • 10 cloves Garlic
  • 1/2 cup Brown Sugar
  • 1/2 cup Soy Sauce
  • 1/2 cup Rice Vinegar
  • 1/4 cup Water
  • 2 tablespoons Toasted Sesame Seed Oil
  • 1 teaspoon Red Pepper Flakes
Puree until smooth.

Pour Galbi Marinade over 3-4 pounds Flanken Style Beef Short Ribs.

Allow to marinate for 12 hours or overnight. I usually will turn them a few times to make sure they are well covered.

A hot Charcoal Grill.

Then barbecue them over a hot grill until edges are slightly caramelized and ribs are cooked through.

Sprinkle generously with Sesame Seeds, and Chopped Green Onion before serving.

Ingredients

Galbi Korean BBQ Marinade
  • 1 whole Asian Pear, Peeled and Cored
  • 1/2 whole Large Onion, Diced
  • 1" piece Peeled Ginger
  • 10 cloves Garlic
  • 1/2 cup Brown Sugar
  • 1/2 cup Soy Sauce
  • 1/2 cup Rice Vinegar
  • 1/4 cup Water
  • 2 tablespoons Toasted Sesame Seed Oil
  • 1 teaspoon Red Pepper Flakes

  • 4 pounds Flanken Style Beef Short Ribs
  • 2 teaspoons Sesame Seeds
  • 3 whole Green Onions, Thinly Sliced

Instructions

Galbi Korean BBQ Marinade
  1. Place everything in a blender and puree until smooth.

  1. Pour marinade over flaken style short ribs. Marinade 12 hours of overnight. Turn ribs in marinade a few times to ensure they are well covered.
  2. Barbecue ribs over hot grill until edges are caramelized and ribs are cooked through.
  3. Sprinkle generously with sesame seeds and green onions before serving.
