This marinade for Greek Chicken is a family favorite. It's delicious over drumsticks, thighs or breast. When it's hot out we love to use it to marinade cubed chicken breast for Greek Chicken Shish Kabobs.
The chicken turns out super tender and juicy every time whether we bake it in the oven like this time or throw it on the grill when the weather heats up.
Plain yogurt and lemon keep the chicken tender while lemon zest, fresh dill, rosemary, thyme, and plenty of garlic leaves the chicken so flavorful.
If your anything like us chicken makes a pretty regular appearance on the dinner rotation and Marinated Greek Chicken definitely deserves a reserved spot on the dinner menu.
Greek Chicken is one of those recipes you'll wonder why it took you so long to make.
To make the Greek Chicken Marinade mix together:
- 1 1/2 cups Plain Yogurt
- 1/2 cup Extra Virgin Olive Oil
- 1/3 cup Fresh Lemon Juice
- 2 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Lemon Zest
- 2 teaspoons Fresh Chopped Dill
- 1 teaspoon Fresh Chopped Rosemary
- 1 teaspoon Fresh Chopped Thyme
- 1 teaspoon Oregano
I almost forgot the garlic! Yikes!
I added 8 large Cloves Garlic Minced. I know some people will say that's way too much garlic, but we love garlic in our house. While others will add 12 cloves. Feel free to adjust the garlic to your preference.
Cover 2-3 pounds Chicken with Greek Yogurt Marinade for at least 2 hours or overnight.
Discard marinade.
To bake chicken drumsticks or thighs bake in a 425 degree oven for 1 hour or until temperature is at least 170 degrees.
Basting about every 20 minutes with pan juices for golden brown crispy skin.
