Asian Cucumber Salad

Looking to change up your side dish at your next summer barbecue? Asian Cucumber Salad is always a hit!  Spicy slightly sweet in a toasted sesame seed oil dressing with just a hint of honey to balance out the vinaigrette.

It's a year around favorite, but the best when cucumber are farm fresh at the peek of summer. It's a summertime must make and is one of those salads that is best made a few hours ahead.

Asian Cucumber Salad is one of those staple salads we make a lot. It's great as a side dish with grilled steak or chicken.


With the weather starting to heat up outside the simpler the side dishes the better. Asian Cucumber Salad is a staple in our house for just that reason it's simple and delicious! 

You can adjust the red pepper flakes to make it less or more spicy to your liking.


Spicy Asian Toasted Sesame Vinaigrette in a shaker jar.

To make the Spicy Asian Toasted Sesame Vinaigrette combine: 
  • 3 tablespoons Rice Vinegar
  • 3 tablespoons Olive Oil or Avocado Oil
  • 2 tablespoons Toasted Sesame Seed Oil
  • 1 1/2 teaspoons Honey
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Granulated Garlic
Whisk or shake together until well combined. Allow to sit while preparing the cucumbers. 

If time allows I like to prepare the Asian Vinaigrette an hour ahead of time to allow the red pepper flakes to soften.

Sliced Cucumber, Sliced Green Onions and Toasted Sesame Seeds in a stainless steel bowl.
Peel and slice 3 large Cucumbers. Drizzle with dressing and add:
  • 2 whole Sliced Green Onions
  • 2 tablespoons Toasted Sesame Seeds
Toss until well combined.

Serve immediately or allow to marinate for a few hours.

Ingredients

Spicy Asian Toasted Sesame Vinaigrette
  • 3 tablespoons Rice Vinegar
  • 3 tablespoons Olive Oil or Avocado Oil
  • 2 tablespoons Toasted Sesame Seed Oil
  • 1 1/2 teaspoons Honey
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Red Pepper Flakes

Assemble Asian Cucumber Salad
  • 3 large Cucumbers Peeled and Sliced
  • 2 whole Sliced Green Onions
  • 2 tablespoons Toasted Sesame Seeds

Instructions

Spicy Asian Toasted Sesame Vinaigrette
  1. Whisk or shake together all ingredients until well combined.
  2. If time allows refrigerate for an hour to allow red pepper flakes to soften.
Assemble Asian Cucumber Salad
  1. Drizzle vinaigrette over cucumbers. Add sesame seeds and green onions.
  2. Toss until well combined.
  3. Serve immediately or refrigerate until ready to serve.
