Are you looking for a Pineapple Salsa maybe a little bit different than all the others? Maybe something with some heat but also bright flavors? Habanero Pineapple Blueberry Salsa is guaranteed to hit the spot!
It makes a great party appetizer and is always a hit for tailgating with chips. We love it over Tacos. The sweet pineapple, blueberries with the kick of habanero and jalapeño makes an amazing fusion of flavors when paired with Fish, Shrimp, Chicken, Pork, or even the Smoked Beef Tacos I will be posting in a few days.
I was a little surprised when Colt said he was totally addicted to this Habanero Pineapple Blueberry Salsa and choose to polish off the bowl before he devoured the remaining Pico De Gallo. He sometimes hesitates when it comes to fruit salsa, but this is far from being overly sweet with a nice heat unlike some Fruit Salsas are.
One of the most important parts of this recipe is selecting a sweet pineapple. I look for a pineapple that's more yellow than green on the exterior and slightly soft, but not mushy.
Then the next most important thing I do is smell the Pineapple. A ripe pineapple will smell sweet and amazing. I avoid pineapples that lack a sweet fragrance or that have an overripe fermented smell.
I used a whole Pineapple for this recipe because with 5 of us we devour any leftovers in the first day or two for an easy snack, but feel free to half the recipe if needed.
Peel and Core 1 whole Pineapple. Simply Recipes shares a great tutorial How to Cut a Pineapple if you've never done it before.
Dice into small enough sized pieces about the size of a blueberry to be able to scoop a few on a chip.
Add 1 1/2 cups Blueberries.
I wore gloves for the next part to chop the chili's.
Stir in:
- 1 handful Chopped Cilantro
- 1 Chopped Habanero Pepper, Stem and Seeds Removed. Add 2 if you like it really spicy.
- 1-2 whole Chopped Jalapeño Peppers, Stem and Seeds Removed
- Juice of 1 whole Lime (use 2 if your limes not juicy.)
Add:
- 1/2 teaspoon Chili Powder
- 1/4 teaspoon Smoked Paprika
- 1/4 teaspoon Granulated Garlic
- 1/4 teaspoon Salt or to taste
We adore Habanero Blueberry Salsa on Smoked Beef Chuck Tacos (recipe comings soon), Quick Shrimp Tacos, Slow Cooked Pork Carnitas, Crock Pot Beef Barbacoa, over baked chicken or fish, or just plain with chips. Oh.. Can't forget Breakfast Burritos!
It's sooo good and easy you'll find yourself making it a lot!
