White Bean Salami Pasta Salad

A favorite summertime Pasta Salad recipe we love in our house is White Bean Salami Pasta Salad. It's one of a dozen go-to variations we love to make.

It's delicious served cold on a hot day for lunch, dinner or a hearty side. It's better made the day before if time allows because the flavor only improves after being refrigerated. White Bean Salami Pasta Salad is one of those dishes the whole family calls dibs on the leftovers.

White Bean Salami Pasta Salad is loaded with Cannellini Beans, Primo Tagilio® Italian Dry Sliced Salami, Rotini Pasta, Primo Tagilio® Fresh Mozzarella Cheese Ball, Bell Pepper, Cucumber, Grape Tomatoes, Diced Artichoke Hearts, Red Onion, Chopped Spinach, Basil, and drizzled with a fresh herb red wine vinaigrette. I then topped with with Primo Tagilio® Shaved Parmesan Cheese for one more layer of flavor.

We frequently make it for summer picnics at the lake, or to take with us to potlucks, and barbecues. It's one of those dishes that always goes fast, and that everyone loves.

I purchased all the ingredients for this White Bean Salami Pasta Salad from my local Safeway. I used the Drive Up & Go™ Safeway Delivery and Pickup App on my phone to save time so Colt just had to pick up the order I placed on his way home from work.

Here's how I make this delicious White Bean Salami Pasta Salad recipe:

To make the Fresh Herb Red Wine Vinaigrette in a shaker jar add:

  • 2/3 cup Extra Virgin Olive Oil
  • 1/3 cup Red Wine Vinegar
  • 1 teaspoon Chopped Rosemary
  • 1 teaspoon Chopped Oregano
  • 2 cloves Minced Garlic
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Black Pepper

Shake together until well combined and emulsified.

I know sometimes it's not possible to use fresh herbs and dried can be used in their place.

A stainless bowl filled with cooked pasta, Cannellini Beans, Red Bell Pepper, Halved Grape Tomatoes, Diced Cucumber, Artichoke Hearts, Diced Red Onion, Chopped Spinach and Chopped Fresh Basil.

Cook 16 ounces Rotini Pasta in boiling salted water according to packaged directions until al dente. Drain pasta and run cold water over the top of pasta to cool. Drain pasta well.

To a large bowl add:

  • Cooled Drained Pasta
  • 15 ounces Rinsed Canned Cannellini Beans
  • 1 whole Diced and Seeded Red Bell Pepper Or Other Favorite Color
  • 1 1/2 cups Diced Cucumber
  • 1 1/2 cups Grape Tomatoes Sliced In Half
  • 16 ounces Drained Quartered Artichoke Hearts In Water
  • 1/3 cup Diced Red Onion
  • 2 cups Chopped Fresh Spinach
  • 1/3 cup Chopped Fresh Basil
  • 2/3 cup Olives (Black or Kalamata)

I forgot to add olives this time and it was still delicious.

Drizzle with about half of the Fresh Herb Red Wine Vinaigrette and toss until well combined.

Dice 12 ounces Primo Taglio® Italian Dry Salami and add to Pasta Salad.

I prefer the Primo Taglio brand exclusively from Safeway because they are made with the finest ingredients using traditional, time-honored preparations methods, and no artificial flavors, colors, or MSG** (**With the exception of some classics like American Cheese and certain Value Meats.)

Many of the Primo Taglio meats use whole muscle meat with no binders or fillers.

Then I diced up 8 ounces Primo Taglio® Fresh Mozzarella Cheese Ball and add to Pasta Salad.

Primo Taglio Cheese uses the highest quality milk and old world recipes, which can be naturally aged up to 2 years.

I then added 3 tablespoons Primo Taglio® Shaved Parmesan Cheese and drizzle with remaining vinaigrette. Mix un till well combined.

White Bean Salami Pasta Salad can be served immediately but is definitely at it's best if refrigerated for a few hours or overnight, until cold.

I shopped at Safeway but you can also find all the products to make White Bean Salami Pasta Salad at the Albertsons Companies family of stores, including Albertsons, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw's Supermarket, Star Market, and Tom Thumb.

White Bean Salami Pasta Salad

Ingredients:

Fresh Herb Red Wine Vinaigrette
  • 2/3 cup Extra Virgin Olive Oil
  • 1/3 cup Red Wine Vinegar

  • 15 ounces Canned Cannellini Beans, Rinsed and Drained
  • 1 1/2 cups Cucumber, Diced
  • 1 1/2 cups Grape Tomatoes, Sliced In Half
  • 16 ounces Drained Quartered Artichoke Hearts In Water
  • 2/3 cup Olives (Black or Kalamata) Optional
  • 1/3 cup Red Onion, Diced
  • 2 cups Fresh Spinach, Chopped
  • 1/3 cup Fresh Basil, Chopped
  • 12 ounces Primo Taglio® Italian Dry Salami, Diced
  • 8 ounces Primo Taglio® Fresh Mozzarella Cheese Ball, Diced
  • 3 tablespoons Primo Taglio® Shaved Parmesan Cheese

Instructions:

Fresh Herb Red Wine Vinaigrette
  1. Add all ingredients to a shaker jar for Red Wine Vinaigrette and shake until well combined.
White Bean Salami Pasta Salad
  1. Cook Rotini Pasta according to package directions in salted boiling water until al dente. Drain and rinse under cold water until cool. Drain pasta well.
  2. To a large bowl add cooked pasta, beans, cucumber, tomatoes, artichoke hearts, olives, red onion, spinach, and basil.
  3. Drizzle with half of dressing and toss until well combined.
  4. Add salami, mozzarella, and parmesan cheese.
  5. Drizzle with remaining vinaigrette. Toss until well combined.
  6. Refrigerate until cold or overnight.
