In a large bowl mix together:
1/2 cup Powdered Sugar
2 teaspoons Grated Organic Lemon Zest
For about 3 minutes on medium speed to work the lemon zest into the sugar. Scrapes sides of bowl as needed.
Add and cream together until light and fluffy.
1 cup Salted Sweet Cream Butter
1/2 teaspoon Pure Vanilla Extract
2 teaspoons Fresh Squeezed Lemon Juice
Add 2 cups All-Purpose Flour. Make sure to fluff flour before measuring so it's not compacted.
Stir until combined.
Scoop tablespoon sized pieces of dough and roll into a ball.
Place Lemon Snowball Cookies on a cookie sheet lined with parchment paper.
Bake in a 350° oven for 12-13 minutes or until the tops are no longer soft when touched.
Cool cookies completely and dust with additional Powdered Sugar.
Then top each cookie with a small pinch of Grated Lemon Zest if desired for a little more kick!

Instructions
