Lemon Snowball Cookies are a delicious Christmas Cookie.
The ingredient list for these cookies are super simple with only 6 ingredients, and about 12 minutes to make the dough! Making these a favorite easy cookie recipe.
The kids always loved to make Snowball Cookies when they were little since it's fun to roll the dough and dust with powdered sugar.
Lemon Snowball Cookies are a light and crumbly cookie that just melts in your mouth. I find the lemon flavor intensifies as they sit overnight and are best eaten the next day making these perfect to give out for Christmas.
Here's how to make these Lemon Snowball Cookies:
First I placed an order with Safeway for Drive Up & Go™ to save time and money when I decided to make these Lemon Snowball Cookies.
I find using Drive Up and Go™ saves us times and money since it prevents us from wondering around the grocery store making unplanned purchases. I also love that the app shows me while ordering if I missed any just for U ® savings so I can add them.
Once my order is pulled Safeway sends an email with the receipt and letting me know it's ready to go..
At the store we pull into the designated Drive Up & Go™ spot and call the number on the sign. We tell them what spot number we are in. Then they bring the groceries out and load them in the trunk! I absolutely love the service!
In a large bowl mix together:
- 1/2 cup O Organics® Powdered Sugar
- 2 teaspoons Grated Organic Lemon
For about 3 minutes on medium speed to work the lemon zest into the sugar. Scrapes sides of bowl as needed.
Cream together until light and fluffy.
- 1 cup O Organics® Salted Sweet Cream Butter
- 1/2 teaspoon O Organics® Pure Vanilla Extract
- 2 teaspoons Fresh Squeezed Lemon Juice
Stir until combined.
Scoop tablespoon sized pieces of dough and roll into a ball.
Bake in a 350° oven for 12-13 minutes or until the tops are no longer soft when touched.

Lemon Snowball Cookies
Lemon Snowball Cookies are a family favorite Christmas Cookie that melt in your mouth from Serena Bakes Simply From Scratch.

Ingredients
- 1/2 cup Powdered Sugar
- 2 teaspoons Organic Lemon Zest
- 1 cup Salted Butter
- 1/2 teaspoon Pure Vanilla Extract
- 2 teaspoons Fresh Lemon Juice
- 2 cups All-Purpose Flour, Fluffed
- 1/2 cup Powdered Sugar for Dusting
- 1 tablespoons Lemon Zest
Instructions
- Preheat oven to 350°.
- In a mixing bowl stir together powdered sugar and lemon zest for 3 minutes at medium speed. Scrape sides of bowl as needed.
- Add butter, vanilla, and lemon juice to powdered sugar mixture. Cream until well combined.
- Add flour and mix until combined.
- Scoop tablespoon sized pieces of dough and roll into a ball. Place on a parchment lined baking sheet.
- Bake for 12-13 minutes until tops are no longer soft when touched.
- Cool cookies completely.
- Dust cookies with additional powdered sugar and a small pinch of lemon zest.
Notes:
